This zucchini recipe is perfect for a quick lunch that can be on the table in less than 30 minutes. It has become an absolute favorite in my family. What I particularly like about this zucchini recipe is its flexibility. You can adjust the ingredients to suit your preferences. Whether you like it spicier and add some chilli or refine the recipe with other fresh herbs – there are countless ways to make it just the way you like it.

Pasta with zucchini – the ingredients

  • Pasta: Here farafalle. But can be replaced by penne, spaghetti or any other pasta shape.
  • Olive oil: For frying; can be replaced by vegetable oil or butter.
  • Onion & garlic : Seasoning; can be replaced by shallots.
  • Vegetable broth: flavor; can be replaced with chicken broth, white wine or water.
  • Zucchini: main ingredient; can be substituted with carrots.
  • Pasta water: Binds the sauce; irreplaceable.
  • Crème fraîche: creaminess; can be replaced by sour cream or sour cream.
  • Fresh herbs: aroma; can be replaced by parsley.
  • Parmesan: seasoning; can be replaced by pecorino.
  • Salt & pepper, oregano: standard spices; oregano can be replaced by thyme.
  • Chili flakes (optional): Spiciness; can be replaced by cayenne pepper.

Step-by-step instructions

  • Cook the pasta: Cook the pasta in salted water until al dente and then keep warm in the pasta water. In the meantime, you can prepare the next steps.
  • Sauté, fry & deglaze: Heat the olive oil in a pan, sauté the onions and garlic and deglaze the onion and garlic mixture with the vegetable stock. Add the grated zucchini to the pan and fry briefly.
  • Add the pasta: Add the al dente pasta to the pan, mix with the zucchinis and fry for 3-4 minutes. Gradually add pasta water until the pasta is cooked.
  • Make creamy: Stir in the crème fraîche, Parmesan and chopped basil.
  • Season & serve: Season to taste with salt, pepper and oregano. Top with additional Parmesan and fresh herbs and enjoy.

    Yes, you can cook the pasta in advance. Make sure to keep it warm in the pasta water just before serving and add it to the zucchini mixture just before serving.

    Yes, you can replace the zucchinis with other vegetables such as carrots, yellow zucchinis or peppers. Make sure you grate the vegetables finely so that they cook quickly.
  • 3. how can I make the recipe vegan?
    Replace the crème fraîche with a plant-based alternative such as soy cream and the Parmesan with vegan cheese or yeast flakes.

    Yes, just use gluten-free pasta instead of normal pasta.

This zucchini recipe is perfect for a quick lunch that’s ready in less than 30 minutes. It’s not only easy to make — in my zucchini pasta recipe, I finely grate the zucchini, which not only shortens the preparation time but also provides a great way to use up larger amounts of zucchini.

Ingredients
  

  • 400 g Pasta Farfalle (bow-tie pasta)
  • Olive oil for sautéing
  • 1 Onion Diced
  • 3 Garlic cloves Chopped
  • About 100 ml vegetable broth
  • 2 Large zucchini Grated, about 1000 g
  • Ca. 250 ml Pastawasser +/-
  • 150 g Herb crème fraîche
  • A handful of fresh herbs: basil Chopped
  • 100 g Parmesan cheese +/– to taste
  • Spices: salt & pepper Oregano
  • Optional: chili flakes

Method
 

  1. Cook the pasta of your choice in salted water until al dente, then keep it warm in the pasta water. Meanwhile, prepare the next steps.
  2. Meanwhile, sauté the onions and garlic in olive oil.
  3. Deglaze with vegetable broth.
  4. Add the grated zucchini and sauté briefly.
  5. Add the al dente cooked pasta to the zucchini, stir, and sauté together for 3–4 minutes. Gradually add a bit of pasta water as needed until the pasta is fully cooked.
  6. Stir in the crème fraîche, Parmesan, and basil.
  7. Season with salt and pepper to taste.
  8. Top with Parmesan and herbs, and enjoy.
