Vegetarian Quiche—with Pumpkin & Sage

Quiche is a versatile dish that’s perfect for many occasions. The combination of pumpkin and sage in this quiche is simply delicious. The hearty flavor of the pumpkin pairs wonderfully with the savory and slightly earthy taste of the sage leaves! For this quiche recipe, I used a 26-cm quiche pan. Pumpkin Quiche with Sage—the Ingredients

Here’s an overview of the ingredients. As always, you’ll find the exact quantities at the very bottom of the recipe card:

  • Flour: The classic version of the dough calls for wheat flour (Type 405). But you could also make it with spelt flour or whole-grain spelt flour.
  • Parmesan: You can either grate the Parmesan yourself beforehand or buy pre-grated Parmesan from the supermarket.
  • Eggs: We need a total of four eggs for this quiche. One egg is for the dough, and three eggs are for the filling.
  • Sour cream: Adding a little sour cream to the crust makes it softer and gives it a savory flavor.
  • Hokkaido squash: The advantage of a Hokkaido squash is that you can use the skin as well. I clean and wash the squash thoroughly beforehand and cut it into wide slices about 1 cm thick.
  • Onions: I also cut the onions into long strips and arrange them in a rose-like pattern on top of my quiche along with the pumpkin slices.
  • Sage: I chop half of the sage leaves and add them to the filling. I brush the remaining sage leaves with olive oil and place them on top of the quiche briefly toward the end.
  • Cream: The cream ensures that the filling turns out nice and moist and flavorful, and perfectly rounds out the flavor of the other ingredients.
  • Garlic: No garlic, no me 🙂
  • Spices: Salt, pepper, nutmeg
  • Serving suggestion: Crisp leaf lettuce or grilled meats

Pumpkin Quiche – Step-by-Step Instructions

  • Step 1: Prepare the dough
    Quickly knead the flour, hard cheese, egg, sour cream, and (cold) butter into a smooth dough. Wrap it in plastic wrap and chill the dough for 60 minutes.
  • Step 2: Preparations
    Meanwhile, wash the pumpkin, remove the seeds, and cut it into 1-cm-wide wedges. Cut the onions into wedges and finely chop the garlic. Remove the sage leaves from the stems and chop two-thirds of them.
  • Step 3: Roll out the dough & place it in the pan
    Remove the dough from the refrigerator 10 minutes beforehand, then roll it out to a thickness of 3–4 mm and slightly larger than the pan. Place it in the pan, forming a rim. Trim off any excess dough around the edges if necessary.
  • Step 4: Filling & Baking
    Prick the crust several times with a fork. Arrange the pumpkin and onion wedges on top in a rosette pattern. Whisk together the eggs, cream, and cheese. Season with salt, pepper, and nutmeg, then stir in the chopped sage and garlic. Pour the egg mixture over the quiche and bake in the oven for 30–35 minutes.
  • Step 5: Top with Sage Leaves & Serve
    Mix the remaining sage with oil and spread it over the quiche; bake for another 10–15 minutes.Remove from the oven, cut the quiche into slices, and serve.

Ingredients
  

For the dough
  • 210 g Wheat flour + a little flour for the pan
  • 100 g grated parmesan
  • 1 Egg
  • 4 tbsp Sour cream
  • 125 g Cold butter + a little extra for the pan
For the topping:
  • 600 g Hokkaido Pumpkin
  • 1 Onion
  • 1 garlic clove
  • approx. 8–10 Sage leaves
  • 3 Eggs
  • 200 g Whipped cream
  • 70 g Parmesan (grated)
  • 1 tbsp Olive oil
Spices:
  • Salt, pepper, nutmeg to taste

  2. Meanwhile, wash the pumpkin, remove the seeds, and cut it into 1-cm-wide wedges. Cut the onions into wedges and finely chop the garlic. Remove the sage leaves from the stems and chop two-thirds of them.
  3. Preheat the oven to 220 degrees (top and bottom heat). Grease the cake pan and dust it with flour.
  4. Remove the dough from the refrigerator 10 minutes beforehand, then roll it out to a thickness of 3–4 mm and slightly larger than the pan. Place it in the pan, forming a rim. Trim off any excess dough.
  5. Prick the bottom several times with a fork. Arrange the pumpkin and onion wedges on top in a rose-like pattern.
  6. Whisk together the eggs, cream, and cheese. Season with salt, pepper, and nutmeg, then stir in the chopped sage and garlic.
  7. Pour the egg mixture over the quiche and bake in the oven for 30–35 minutes.
  8. Mix the remaining sage with oil and spread it over the quiche; bake for another 10–15 minutes.
  9. Remove it from the oven, cut the quiche into pieces, and serve.
