Palak Paneer – the classic

Palak paneer is widely used in North Indian cuisine, especially in the Punjab and Uttar Pradesh regions. It is an integral part of family meals, celebrations and festive occasions. The combination of hearty spinachand tender paneer makes it a popular vegetarian dish. In restaurants around the world, palak paneer has become a symbol of Indian cuisine.

About my Palak Paneer recipe

  • Frying the paneer for intense flavor:Frying the paneer pieces gives them a golden brown crust.

  • Quenching spinach for a vibrant color: If you are using fresh spinach leaves, briefly place them in ice water after cooking. This shocking process preserves the bright green color. As we all know, you eat with your eyes, and a vibrant green color not only makes the dish delicious, but also visually appealing. If you are using frozen spinach leaves, this step is not necessary.

  • Puree for an authentic consistency: To achieve the creamy consistency familiar from Indian restaurants, the entire mixture of spinach and other ingredients is pureed. However, if time is short and you prefer a quicker preparation, the ingredients can simply be cut into smaller pieces. The result will still be delicious.

Tips, tricks & variations

  • More intense flavor by frying the paneer longer: For an even more intense paneer flavor, you can fry the pieces a little longer. This gives them a deeper golden color and a stronger flavor. Be careful not to fry for too long to preserve the tender texture.

  • Vary the amount of chili according to your spiciness preference: The spiciness of the dish depends heavily on the amount of green chilies. If you like it a little milder, you can reduce the amount or remove the seeds. Conversely, if you like it particularly spicy, feel free to add more.

  • Experiment with spice quantities: The spice quantities given are guidelines. Experiment according to your own taste and add more or less spices.

  • Fresh versus pureed consistency: If you prefer the fresh consistency, you can try the pureed mixture before adding the cream and paneer. If you already like the consistency, you can skip this step and leave the sauce a little more rustic.

  • Replace ingredients: You can replace paneer with natural tofu or halloumi. When adding salt, note that the halloumi has its own salty note. Fresh spinach leaves and fresh cream can also be replaced with frozen creamed spinach. Instead of fresh tomatoes, you can also use chopped canned tomatoes. However, I always recommend using fresh ingredients if possible.
  • Serving suggestions for the ultimate palak paneer experience: Serve the palak paneer with freshly baked naan or fragrant basmati rice. Sprinkle fresh coriander and fresh cream over the dish before serving.

Ingredients
  

  • Neutral oil for sautéing the paneer pieces
  • 1 tbsp Ghee or a neutral oil
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • 1 red onion
  • 4 Garlic cloves
  • 1 Tomato
  • 15 g Piece of ginger
  • ½ fresh green chili
  • 600 g fresh spinach leaves
  • 150 ml cream
  • 1 Package of paneer about 500g
Spices:
  • 1 teaspoon paprika powder
  • ½ teaspoon chili powder
  • 1 tsp ground cilantro
  • ½ tsp turmeric
  • ½ tsp Garam Masala
  • Salt to taste
Other:
  • Fresh cilantro

Equipment

  • 1 Schüssel mit Eiswasser

Method
 

  1. Press excess liquid out of the paneer by patting it dry with a paper towel. Cut the paneer into rectangular pieces 2–3 cm thick. Peel the onions and chop them coarsely. Peel the garlic cloves and ginger, then chop them coarsely. Chop the tomato coarsely as well. Prepare a large bowl of ice water (water with ice cubes).
  2. Add the spinach leaves to boiling water and cook for 2–3 minutes. Remove the spinach once it’s tender, place it directly into the ice water, let it sit there briefly, then remove it and set it aside for later.
  3. Heat enough neutral oil in a skillet to coat the bottom well. Fry the paneer pieces on both sides until golden brown, then drain them on a paper towel and set aside for later.
  4. In the same pan, add the cumin and mustard seeds and sauté for about 30 seconds, until they begin to pop. Add the onions, garlic cloves, ginger, chili, and tomatoes, and sauté briefly over high heat. Then continue cooking over medium heat for about 4–5 minutes. Remove the pan from the heat and let it cool to lukewarm.
  5. Blend all the ingredients and the spinach leaves in a blender until smooth.
  6. Heat 1 tablespoon of ghee in the same pan. Add the spices and sauté over medium heat for 30–40 seconds. Add the paste from the blender. Bring everything to a boil, then add half of the cream. Cover and let simmer over medium heat for 5–10 minutes. Season with salt to taste.
  7. Add the pieces of paneer, let it simmer for another 2–3 minutes, and if you like, garnish with the remaining cream.
  8. Garnish with fresh cilantro and serve with naan or basmati rice.
