About my tiramisu recipe

This tiramisu recipe comes very close to a classic tiramisu, but without the raw eggs and without alcohol. Instead of the usual amaretto, I use bitter almond oil and the recipe is super simple: no baking, no tempering of raw eggs – just mix, layer and put in the fridge. The hardest part? Waiting patiently until the tiramisu is firm enough to finally enjoy!

  • Whipped cream: It should be well chilled so that it is easy to whip.
  • Mascarpone: An Italian cream cheese that gives tiramisu its typical velvety texture.
  • Sugar: Can be adjusted to taste.
  • Vanilla extract: Gives the cream an aromatic note.
  • Espresso or strong coffee:The coffee should be cooled down before it is used.
  • Bitter almond oil: Replaces the traditional amaretto and adds an intense almond flavor.
  • Ladyfingers: They should only be lightly dipped in the coffee to retain texture.
  • Cocoa powder: The cocoa powder serves as the final layer. It is best sprinkled over the tiramisu just before serving.

Step-by-step instructions

  • Beat the whipped cream until medium firm.
  • Mix the mascarpone, sugar and vanilla until well combined. Add the whipped cream. Use a rubber spatula and lift the mixture a few times, scraping the bottom and sides of the bowl. Then use the mixer again to blend the mixture until smooth.

  • Stir the coffee and bitter almond flavoring together. Lightly dip each ladyfinger into the coffee mixture. Do not soak, otherwise the cookies will be soggy. Place a layer of cookies in a square baking dish (here: 20×20).
  • Spread half of the cream mixture over the cookies. Repeat another layer and place the tiramisu in the fridge for at least 4 hours or overnight.
  • Dust with cocoa powder before serving.

Tips for the perfect tiramisu

  • Whip the cream properly: For a firm filling that is easy to cut, I like to whip the cream to firm peaks. But be careful – there is only a fine line between firm peaks and over-whipping. If you want to be on the safe side, only whip the cream until medium firm peaks form. If the cream does overbeat, you can simply add 1-2 tablespoons of cold cream and stir in carefully by hand until the mixture is smooth again.

  • Dip the ladyfingers only lightly: Only dip the ladyfingers briefly into the coffee mixture – a quick dip of 1 second on each side is enough. If they are soaked for too long, they could fall apart and the tiramisu will be too mushy.

  • What are ladyfingers? Ladyfingers are dry, spongy cookies in the shape of a finger. The Italian Savoiardi cookies or the French Boudoir cookies are best suited for tiramisu.
  • Where can I buy ladyfingers? You can find them on the cookie shelf in your supermarket or online at Amazon.
  • Can I make tiramisu without mascarpone? Yes, you can replace the mascarpone with 170g of cream cheese, 2 tablespoons of sour cream and 3 tablespoons of whipped cream, stirred together until smooth.   • How long in advance can you prepare tiramisu? You can prepare tiramisu 1-2 days in advance, as it will keep for up to 4 days in the fridge. You can also freeze it for up to 3 months.

Ingredients
  

  • 250 ml whipped cream
  • 250 g mascarpone soft
  • 40 g sugar +/– to taste
  • 1 tsp vanilla extract
  • 360 ml espresso or very strong coffee cooled
  • ½ small bottles bitter almond extract (approx. 1 ml)
  • 24 ladyfingers (approx. 200 g) The number of cookies depends on the size of your dish. This one is 20×20.
  • 2 tbsp unsweetened cocoa powder

Method
 

  1. Brew a strong coffee or espresso and let it cool.
  2. Mix the mascarpone with sugar and vanilla extract until smooth. Whip the heavy cream until stiff and gently fold it into the mascarpone cream.
  3. Mix the coffee with the bitter almond extract. Briefly dip the ladyfingers into the cooled coffee (not too long, or they’ll get soggy). Place a first layer in a small dish. Cover with half of the cream. Then add another layer of soaked ladyfingers and spread the remaining cream on top (here 20 × 20).
  4. Refrigerate for at least 3–4 hours, preferably overnight.
  5. Dust with unsweetened cocoa powder before serving.
