  • Tomatoes: Ripe vine tomatoes or aromatic Roma tomatoes work best, as they are nice and juicy and full of flavor.
  • Garlic: Essential for that authentic flavor; I use one clove for the topping and one whole clove to rub on the hot bread. Depending on the size, you can also use more garlic.
  • Fresh basil: Brings that Mediterranean freshness and color to the table—dried herbs just can’t compare :).
  • Olive oil: Use a high-quality extra virgin olive oil here, as it plays a key role in determining the dish’s well-rounded flavor.
  • Balsamic vinegar: A splash of fine dark balsamic vinegar in the tomato mixture adds a subtle tang and pairs perfectly with the tomatoes.
  • Balsamic cream or dressing: Adds a visual and flavorful highlight as a topping when plating.

Step-by-step instructions

  • Step 1: Prepare the tomato topping
    Wash the tomatoes and cut them into small cubes. Cut the basil leaves into thin strips. Mince the second clove of garlic very finely or grate it. Place the tomatoes, basil, and garlic in a bowl along with the olive oil and balsamic vinegar. Season generously with salt and freshly ground black pepper, then stir well. Let the mixture sit for a few minutes so the flavors can blend.

  • Step 2: Prepare & Bake the Baguette
    Preheat the oven to 200 °C (top/bottom heat). Cut the baguette into diagonal slices about 1.5 to 2 cm wide. (The diagonal cut gives you a larger surface area for your toppings.) Brush both sides of the slices lightly with olive oil. Place them on a baking sheet lined with parchment paper and bake them in the oven for about 6 minutes, until they’re golden brown and crispy. Flip them halfway through. Important: Keep a close eye on the oven, as the bread can burn very quickly!
  • Step 3: The Garlic Secret
    Take the baguette slices out of the oven. While they’re still nice and hot, take a peeled garlic clove and rub it evenly over the top of the slices. The heat and the rough texture of the toasted bread allow the garlic flavor to infuse perfectly.

Ingredients
  

  • 1 large baguette
  • 4 tbsp Olive oil divided between bread and toppings (+/-)
  • 2 Garlic cloves
  • 200 g ripe tomatoes
  • 1 handful of fresh basil leaves
  • 2 tbsp Balsamic vinegar
  • Salt & freshly ground black pepper
  • some Balsamic cream or dressing for garnish

Method
 

  1. Preheat the oven to 200 °C (top and bottom heat). Cut the baguette diagonally into slices 1.5–2 cm thick.
  2. Brush both sides of the slices with 2 tablespoons of olive oil, place them on a baking sheet, and bake for about 6 minutes (turning them after 3 minutes) until they are golden brown.
  3. Rub the hot bread immediately with a peeled clove of garlic.
  4. Dice the tomatoes, cut the basil into strips, and finely chop the second clove of garlic.
  5. Mix everything together in a bowl with the remaining 2 tablespoons of olive oil, balsamic vinegar, salt, and pepper, and let it sit for a few minutes.
  6. Spread 1–2 tablespoons of the tomato mixture on each slice of baguette, garnish with basil and balsamic cream, and serve immediately.
