The appreciation of food, the creativity of mothers in the kitchen and being together as a family and often several families is something very special at this time. What is Ramadan?

Ramadan is a significant time in the Islamic calendar, celebrated by millions of Muslims around the world. It is a month of devotion, fasting, prayer and self-reflection. During this time, Muslims abstain from food and drink from sunrise to sunset to deepen their spiritual connection and show gratitude.

Aside from its spiritual significance, Ramadan is also a time when culinary creativity flourishes. From rich soups to exquisite desserts, there is an abundance of traditional dishes that are shared with family and friends. Every household has its own favorite recipes and traditions that make this time of year special.

Iftar & Sahur – what does that mean?

“Iftar” and “Sahur” are two terms used in connection with the Islamic fasting month of Ramadan.

  • Iftar: This is the Arabic word for breaking the fast. It refers to the meal that Muslims eat after sunset during Ramadan to break their fast. The time of iftar is announced by the call to prayer for the evening prayer, also known as “adhan”.

  • Sahur: This is the meal that Muslims eat before sunrise during Ramadan, before they fast. It is often referred to as ‘breakfast’ before the start of fasting. Sahur is typically eaten before dawn and ends with the call to prayer for the morning prayer, the “Fajr-Adhan”.

Ramadan Recipes – Soup, Breads & Sahur Food

During Ramadan, soups are popular for their nutrients and soothing effect. Breads, such as pita or herb breads, are a main component and provide essential carbohydrates. At the pre-dawn sahur meal, protein and carbohydrate-rich options such as egg dishes or porridge are common to fortify believers for the fasting day. I have summarized some recipes for you below.

Aloo means potato in Pakistani and paratha is the buttery flatbread that is filled with ingredients. In Pakistan and India, paratha is usually enjoyed with a delicious yogurt dip, spicy pickled vegetables and a delicious cup of chai.

Ramadan Food – the Best Recipes

Ingredients
  

For the Masala
  • 150 ml oil (e.g., sunflower oil)
  • 4 chicken thighs halved and skinned
  • 2 large onions (or 5 small), cut into thin strips
  • 7 cloves garlic
  • ca. 15 g ginger piece
  • 4 Small tomatoes diced
  • 4 tbsp plain yogurt 3,5% fat
  • 2 Medium potatoes roughly chopped
  • 1 handfull dried plums
Spaces
  • 3 tsp Biriyani Masala The recipe can be found further below
  • 1 tsp turmeric
  • 1 tsp chili powder (hot)
  • salt (to taste) to taste
For the Rice
  • 500 g basmati rice
  • 1 bay lea
  • 1 star anise
  • 2 cloves
  • 1,5 tsp salt
Other:
  • ½ tsp saffron
  • 50-100 ml lukewarm water
  • 1 handvoll fresh cilantro chopped
  • 1 handvoll fresh mint chopped
  • 1 Bio lemon (organic), cut into thin strips
Für das Biryani Masala:
  • 2 star anise
  • 5 green cardamom pods
  • 4 cloves
  • 2 large black cardamom pods (optional) optional
  • 1 mace
  • 5 dried red chilies
  • 1,5 tsp ajwain (optional) optional
  • 1,5 tsp nutmeg powder
  • 1,5 tsp Jeera (cumin seeds)
  • 1,5 tsp black peppercorns
  • 1,5 tsp fennel seeds
  • 1,5 tsp coriander seeds

Equipment

  • 1 spice grinder for the biryani masala
  • 1 Mortar for the garlic-ginger paste

Method
 

Preparing the Saffron Water
  1. Grind the saffron threads into a powder using a mortar.
  2. Add lukewarm water or 2 ice cubes to dissolve the saffron.
  3. Set aside for later.
Prepare the Rice
  1. Wash the rice thoroughly and soak it in water.
  2. Cook the rice in plenty of water together with the cloves, bay leaf, and star anise.
  3. Salt to taste, and cook until the rice is about 90% done.
  4. Drain the rice using the pasta method and let it sit to drain completely.
Prepare the Masala
  1. Heat the oil in a large pot and sauté the onions over medium heat until soft and golden brown (this may take up to 20 minutes).
  2. Remove two-thirds of the onions (leaving as little oil as possible) and set them aside for later.
  3. Add the chicken to the pot and sear well on both sides.
  4. Add the garlic-ginger paste, biryani masala, chili powder, and turmeric. Sauté everything evenly over medium heat.
  5. Add the tomatoes and yogurt and continue cooking for another 1–2 minutes.
  6. Add the potatoes, dried plums, and one-third of the fried onions.
  7. Simmer on medium heat for 5–7 minutes, until the oil begins to separate and the chicken is cooked through.
  8. Salt to taste.
  9. Remove the pot from the heat and set aside.
Assemble the Biryani
  1. In a large pot, start layering: first rice, then the masala.
  2. In between layers, add fresh mint, cilantro, lemon slices, and saffron water.
  3. The top layer should always be rice.
  4. Add the remaining herbs, saffron, and the rest of the fried onions on top.
  5. Seal the pot tightly and cook on low heat for about 20 minutes.
  6. If necessary, place a kitchen towel between the pot and the lid to prevent steam from escaping.
For the Biryani Masala
  1. Add all ingredients to a spice grinder and grind into a fine powder.
  2. This amount of biryani masala makes approximately 6 tsp —
  3. meaning you can cook biryani twice with this batch. 😊

Notes

  1. I recommend cooking the rice fresh. For layering, it’s best when the rice is still warm and slightly moist — this helps it finish steaming properly later.
  2. For a vegan or vegetarian version: You can substitute the chicken with vegetables, tofu, or paneer.
