Pumpkin Curry with Coconut Milk—super creamy!

A highlight of the fall season is the Hokkaido squash, which is perfect for hearty and comforting dishes. That’s why today I’d like to share my delicious squash curry with coconut milk and peas with you. It’s super tasty, creamy, and really easy to make. Pumpkin Curry Recipe – Ingredients at a Glance 

  • Squash: Instead of Hokkaido squash, you can also use butternut squash, nutmeg squash, or another firm variety of squash.
  • Oil for sautéing: You can use different types of oil, such as olive oil, canola oil, coconut oil, or ghee, depending on your taste and preferences.
  • Mustard seeds: Mustard seeds give the curry a special flavor, but if you don’t have any on hand, you can leave them out. 
  • Cumin: Cumin is an important spice in many curries. If you don’t have cumin, you could use ground cumin instead.
  • Garlic & Onion: They provide a good base, so be sure to use them. 
  • Ginger: I always recommend using fresh ginger, but if you don’t like fresh ginger or don’t have any on hand, you can use ground ginger instead. Keep in mind that the flavor may be different.
  • Tomato paste: If you don’t have tomato paste, you could use pureed fresh tomatoes instead to create the same tomato base.
  • Coconut milk: If you don’t like coconut milk or can’t tolerate it, you could use cream or plant-based cream alternatives instead.
  • Spices: Coriander, chili, paprika, and turmeric. You can adjust the spices to suit your taste. You can control the heat with chili powder or add additional spices such as garam masala.
  • Peas: If you don’t want to use peas, you could add spinach, leafy greens, or other vegetables of your choice instead.
  • Cilantro: If you’re not a fan of cilantro, you can substitute fresh parsley or scallions.

Hokkaido Pumpkin Recipe – Step-by-Step Instructions

  • Step 1: Prepare the pumpkin
    Cut the pumpkin in half, remove the seeds, and cut it into bite-sized pieces (to make the pumpkin easier to cut, you can briefly place it in a large pot of hot water and let it simmer for 2–3 minutes, then remove it, let it cool, and cut it). Place the pumpkin pieces on a baking sheet, season with salt, pepper, paprika, and olive oil, and bake in the oven at 200 degrees for about 20 minutes.
  • Step 2: Preparing for the Curry
    Meanwhile, chop the onions and crush the garlic and ginger in a mortar. Chop the tomatoes as well.
  • Step 3: Prepare the base for the curry
    Heat oil in a large pot. Add cumin and mustard seeds; as soon as they start to sizzle, add the onions and sauté over medium heat. Add the garlic-ginger paste and sauté briefly.Add the spices and tomato paste and sauté for another 1–2 minutes. Deglaze with the chopped tomatoes and sauté briefly over high heat. Add water and coconut milk, season to taste again, and simmer covered over medium heat.
  • Step 4: Combine & Serve
    Carefully add the roasted pumpkin from the oven to the simmering curry. Add the peas and stir everything gently; let it simmer gently for 2–3 minutes. Top with fresh cilantro and serve with basmati rice.

Can you freeze pumpkin curry?

Yes, you can freeze this pumpkin curry to store it for a longer period of time. Here are a few steps you should follow to ensure that the curry retains its quality during freezing and thawing:

  • Let the pumpkin curry cool to room temperature first before putting it in the freezer
  • Divide the curry into portions as needed. You can freeze it in individual portions to make it easier to thaw later.
  • Use airtight freezer containers or freezer bags to freeze the curry. Squeeze out as much air as possible to prevent freezer burn.
  • To thaw, place the frozen portion of curry in the refrigerator and let it thaw slowly overnight. This is the best way to preserve its texture and flavor.

Ingredients
  

For the roasted pumpkin:
  • 1 Hokkaido Pumpkin approx. 600g
  • 4 tbsp Olive oil for the pumpkin
  • Paprika, salt, and pepper
Other ingredients:
  • Oil for searing
  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • 1 large Onions
  • 4 Garlic cloves
  • 15 g Piece of ginger
  • 2 tbsp Tomato paste
  • 3 Chopped tomatoes
  • 250 ml Coconut milk
  • 300-400 ml Water
  • about 5 tbsp Frozen peas
For spices:
  • 1 tsp each Turmeric, paprika, and cilantro powder
  • ½ tsp Chili powder
  • Salt & Pepper to taste

  • 1 Mortar

Method
 

  1. Cut the pumpkin in half, remove the seeds, and cut it into bite-sized pieces; spread them out on a baking sheet. Season with olive oil, salt, pepper, and paprika, and bake in the oven for about 30 minutes. Turn them over halfway through.
  2. Meanwhile, chop the onions and crush the garlic and ginger in a mortar. Chop the tomatoes as well.
  3. Heat the oil in a large pot. Add the cumin and mustard seeds; as soon as they start to sizzle, add the onions and sauté over medium heat. Add the garlic-ginger paste and sauté briefly.Add the spices and tomato paste and sauté for another 1–2 minutes.
  4. Deglaze with the chopped tomatoes and sauté briefly over high heat. Add the water and coconut milk, season to taste again, and simmer covered over medium heat for 5–10 minutes.
  5. Carefully add the roasted pumpkin from the oven to the simmering curry. Add the frozen peas and stir everything gently. Let it simmer gently for another 2–3 minutes. Top with fresh cilantro and serve with basmati rice.

Notes

  1. To make it easier to cut the pumpkin, you can first place it briefly in a large pot of hot water and let it simmer for 2–3 minutes, then remove it, let it cool, and then cut it.
