My childhood dish – rice with chicken

We used to spend hours playing outside with our neighbors’ children. Just before it was time for dinner, the smell of a delicious broth of chicken, garlic, cumin, coriander and fresh rice wafted out of the kitchen window. Mom called out, “Kids, come on, dinner’s ready!” – and we quickly ran inside and spread out a large hand-embroidered blanket and spread the plates, glasses and spoons on it. My mom came in with a warm pot, covered with a tea towel (so that no steam would escape and the rice would be extra long and grainy). She placed the pot in the middle. One by one, my mom distributed rice and exactly one piece of meat for each portion – you can imagine the rest: We ate with relish and forgot all the worries and sorrows that come with being an immigrant child. It is simply the CHILDREN’S DISH for me! Yes, I’m getting quite emotional right now. That’s why I’m going to stop here and look at the ingredients together. Let’s go!

Pakistani rice dish pilaf – what is it?

Pilaf is a very special dish in Pakistani and Afghan cuisine. Pilaf actually just means rice, but it is THE rice dish. In other words, the king’s rice dish! The special thing about this dish is that it is prepared with very few ingredients, but still tastes extremely delicious. The rice is cooked in a homemade chicken and garlic broth. Every single grain is infused with this incredibly delicious chicken flavor! Something very special in the preparation of the dish are the brown to dark brown fried onions, which give off this great color and wonderful taste.

The ingredients for Pilaf (rice with chicken)

  • Chicken thighs: Remove the skin beforehand and cut into 2-3 pieces.
  • Basmati rice. For a particularly long grain, you can use an extra-long basmati rice. But it doesn’t have to be!
  • Garlic. After chicken and rice, garlic is the star here. That’s why we need a lot of it!
  • Onion. The brown color in the rice comes from the brown fried onions.
  • Ginger. Some people leave ginger out completely, I like to include it. You can decide for yourself 🙂
  • Pepper. The spiciness in this dish comes mainly from the pepper. I therefore recommend using whole peppercorns.
  • Spices: Turmeric, cumin, coriander seeds, cinnamon stick, bay leaf, salt & pepper
  • Sunflower oil. For frying.
  • Other: Fresh green chili he likes it hot

Shiba’s tips & tricks – my favorite rice dish!

Pilaf is the dish I first learned to make from my mother. I must have cooked it a hundred times by now. I have summarized my experiences below:

  • Pilaf with chicken should be cooked in a tall, slightly larger pot, as all the ingredients are prepared in this one pot.
  • I use rice from the Tilda brand (extra long). It is known for having a particularly long grain.
  • Before you add the rice to the broth, be sure to taste it! The broth should taste slightly salty. The rice will balance out the salty taste later.  
  • A fresh yogurt-mint dip and cucumber-tomato salad go well with it.

Pakistani pilau (rice with chicken)

Today I'm going to show you the Pakistani version of rice with chicken: pilau - an incredibly tasty and delicious dish from my childhood. I hope you enjoy cooking it for yourself 🧡.

Ingredients
  

  • 400 g Basmati rice extra long (optional)
  • 100 ml Oil eg. Sunflower oil
  • 1 tsp Cumin
  • 1 tsp Coriander seeds optional
  • 1 large Onion cut into long strips
  • 4 Chicken thighs (skinned & halved) approx. 1.5 kg
  • 1 tbsp Pepper My recommendation: freshly ground
  • 2 tsp Kurmuma
  • approx. 10 g Piece of ginger
  • 1 Whole head Garlic approx. 8 cloves of garlic
  • 2 Bay leaf
  • 2 fresh hot green chili pepper optional
  • 700 ml Water
  • 2,5 tsp salt

Method
 

  1. Wash the rice in a sieve and drain. Soak the rice in a bowl of water and set aside. Cut the onions into long strips. Crush the peppercorns in a mortar (optionally you can also use ground pepper).
  2. Heat the oil in a large pan. Add the cumin and coriander seeds and fry for approx. 30 seconds,
  3. Turn the heat to medium. Add the onions and fry until they have taken on a dark golden brown color. This may take 5-10 minutes.
  4. Deglaze with a little water (approx. 50 ml) and immediately cover with the lid. This will soften the onions and release their dark color and aroma.
  5. Open the lid of the pan again, add the meat and brown well all over.
  6. Add the turmeric, pepper, cinnamon stick and salt and fry again.
  7. Deglaze with water and bring to the boil. Add the fresh chili and bay leaf.
  8. Meanwhile, peel the garlic and ginger and pound to a paste in a mortar. Alternatively, chop finely.
  9. As soon as the water comes to the boil, add the garlic-ginger paste and simmer over a medium heat with the lid on for approx. 15 minutes. Allow all the flavors to develop in the broth.
  10. Drain the soaked rice and add to the simmering chicken and spice stock, stirring carefully.
  11. Bring to the boil once, then reduce the heat and put the lid on the pan. Simmer the rice in the chicken and spice stock for about 20 minutes until it is cooked through.
  12. Remove the pan from the heat and leave to rest for about 10 minutes before carefully fluffing with a fork.
  13. Enjoy with a refreshing yogurt-mint dip and tomato-cucumber salad.

Notes

  1. You can also use beef or lamb instead of chicken. However, note the different cooking times.
  2. Before you add the rice to the stock, be sure to taste it! The broth should taste slightly salty. The rice will balance out the salty taste later.
  3. Pilau tastes particularly delicious the next day, as all the spices and flavors are better infused.
