Overnight oats basic recipe and topping ideas

Overnight oats are my breakfast favorite when there is no time in the morning. No cooking, no effort – just prepare them in the evening and enjoy them the next day. In this post, I’ll show you a simple basic overnight oats recipe – plus three delicious variations with coconut, berries or cocoa. So there’s never a dull moment at the breakfast table. What are overnight oats?

Overnight oats are oat flakes that swell overnight in liquid such as milk or yogurt. The result is a creamy breakfast porridge that is eaten cold. The advantage? No cooking necessary! The flakes absorb the liquid slowly and become soft, filling and digestible.

Overnight oats with yogurt – the ingredients

Here’s an overview of the ingredients. As always, you’ll find the exact measurements at the bottom in the recipe card.

  • Oat flakes: You can use tender or grainy rolled oats. Soft oat flakes are nice and soft, while the grainy ones have a little more bite. Instant flakes are not ideal – they quickly become mushy.
  • Plant-based milk: Almond or cashew milk taste particularly good, but oat, soy or rice milk will also work. If you prefer, you can of course also use normal cow’s milk.
  • Chia seeds: They ensure a creamy consistency and provide additional fiber and omega-3 fatty acids. Alternatively, you can also use ground linseed (substitute at a ratio of approx. 1:1).
  • Vanilla extract: For a subtle flavor. You can also use vanilla sugar or the pulp of half a vanilla pod instead – or simply leave it out if you prefer a more neutral flavor.
  • Yoghurt (Greek or plant-based)
    Greek yogurt makes the oats particularly creamy and rich in protein. Coconut, almond or soy yogurt is suitable for a vegan version. Skyr or quark are also possible, in which case you may need a little more liquid.

How do you make overnight oats?

  • Step 1: Mix the base mixture: Mix the rolled oats, plant-based milk, yogurt, chia seeds and vanilla extract.
  • Step 2: Leave to infuse: Leave to rest overnight (but at least 15 minutes) in the fridge.
  • Step 3: Portion & top: Pour into glasses and top as desired.
  • Tip: Prepare several portions in advance – they keep wonderfully!

Why overnight oats with yogurt?

The combination of plant-based milk and yogurt ensures a particularly creamy consistency and provides additional protein – ideal for a nutritious breakfast. You can use classic Greek yogurt or a plant-based variant such as coconut yogurt.

Overnight oats: 3 delicious topping ideas

Whether fruity and exotic with coconut and lime, fruity and nutty with berries and almond butter or chocolatey with cocoa and hazelnut – these three topping ideas will turn your basic overnight oats recipe into a new favorite breakfast every day. Ideal for preparing and taking away!

Topping 1: Coconut & lime

Overnight Oats
  • 2 tbsp coconut chips, toasted
  • 1 teaspoon lime juice + zest1
  • Tbsp maple syrup
  • Coconut yogurt instead of Greek yogurt in the base
  • Preparation: Mix the maple syrup, lime juice and zest into a serving and top with coconut chips.

Topping 2: Almond butter & berries

Overnight Oats
  • 75 g frozen berries
  • 2 tsp water
  • 1 tbsp almond butter
  • Preparation: Simmer the berries with water for 3-4 minutes, leave to cool. Layer the oats with berries and almond butter, sweeten to taste.

Topping 3: Hazelnut & cocoa

Overnight Oats
  • 1 tbsp raw cocoa powder
  • 1.5 tbsp maple syrup
  • 1 tbsp hazelnut butter
  • 1 tbsp roasted hazelnuts, chopped
  • Preparation: Stir everything into a portion of the base, adding more maple syrup if desired.

What is the shelf life of overnight oats?

Overnight oats will keep for up to 3 days if well sealed in the fridge. If possible, use fresh ingredients and no fruit with a short shelf life directly in the base.

Why shouldn’t you stir overnight oats?

After swelling, it is advisable not to stir the oats vigorously so that the creamy consistency is retained. However, it is important to mix thoroughly before swelling so that the chia seeds and oats swell evenly

Which rolled oats are suitable for overnight oats?

Soft or grainy oat flakes work best. Tender flakes give a softer consistency, while the grainier ones provide more bite. Instant flakes soften too quickly, steel cut oats take too long.

Overnight Oats Base Recipe & Topping Ideas

This simple overnight oats base recipe made with yogurt is perfect for meal prep and can be topped in countless ways. It’s ideal for a quick, healthy breakfast at home or on the go.

Ingredients
  

  • 225  g rolled oats quick or old-fashioned
  • 550  ml plant-based milk e.g., almond or cashew milk
  • 1 tbsp chia seeds
  • 1 vanilla extract
  • 60  g yogurt  Greek or plant-based

Method
 

  1. Add the rolled oats, plant-based milk, chia seeds, vanilla extract, and yogurt to a bowl.
  2. Stir well, cover, and let it sit in the refrigerator overnight.
  3. The next morning, divide into 3–4 jars or bowls.
  4. Add any toppings you like and enjoy.

Notes

Tip: Overnight oats will keep in an airtight container for up to 3 days in the refrigerator.
