Step-by-step instructions

  • Step 1: Preheat the oven to 220 °C (top and bottom heat). Sear the cabbage wedges in olive oil on both sides for 2–3 minutes over high heat. Season.
  • Step 2: Deglaze with broth, cover, and braise in the oven for 15–20 minutes. Remove the lid and bake for another 7 minutes.
  • Step 3: Meanwhile, toast the walnuts. Sauté the olives and capers in olive oil for 1–2 minutes until crispy.
  • Step 4: Mix together the lemon juice, vinegar, tahini, mustard, ginger, honey, and spices. Stir in the oil and water a little at a time until the dressing is creamy.
  • Step 5: Arrange the cabbage on a plate, drizzle with the dressing, and garnish with the crispy topping, herbs, and lemon zest. Enjoy!

Forget boring cabbage! This vegetarian pointed cabbage recipe turns out super tender and gets the perfect crunch from an olive-walnut topping. My oven-roasted pointed cabbage with a creamy ginger-tahini dressing is simply amazing!

Ingredients
  

For the cabbage:
  • 1 small pointed cabbage cut into 6 columns
  • 2 tbsp Olive oil for searing
  • A good pinch of salt and pepper
  • 180 ml Vegetable or chicken stock
For the topping:
  • 1 tbsp Olive oil + more for sideboards
  • 1 tbsp Capers +/- to taste
  • 6 Olives (pitted and chopped) +/- to taste
  • 35 g Walnuts or other nuts of your choice
  • 1 tbsp fresh dill finely chopped
  • 1 tsp lemon zest
  • Salt & pepper
For the ginger-tahini dressing:
  • 1,5 tbsp Lemon juice
  • 1 tsp Apple Cider Vinegar optional
  • 30 g Tahini
  • 1 tsp Dijon mustard
  • 1 tsp fresh ginger grated
  • 1 tbsp Olive oil
  • 1 tsp Honey
  • A pinch of salt and pepper
  • Cold water for diluting

Method
 

  1. Preheat the oven to 220 °C (top and bottom heat) or 200 °C (convection).
  2. Heat a large skillet over medium-to-high heat, add the oil, and sear the cabbage wedges on each side for about 2–3 minutes until they are lightly browned. Season with salt and pepper to taste.
  3. Pour the broth into the pan, cover the pan with a lid, and place it in the preheated oven for 15–20 minutes.
  4. Remove the lid and bake the cabbage in the oven for another 5 minutes, until it is tender and the liquid has completely evaporated.
  5. While the cabbage is cooking in the oven, toast the walnuts in a nonstick skillet without oil until they become fragrant, then set them aside.
  6. Add 1 tablespoon of olive oil to the same pan and heat the capers and olives in it for 1–2 minutes, until they are slightly crispy.
  7. For the dressing, combine the lemon juice, apple cider vinegar, tahini, Dijon mustard, honey, ginger, salt, and pepper in a bowl. Add the olive oil, stir again, and gradually stir in a little cold water until the dressing is smooth and thin enough. Taste and adjust to your liking if necessary.
  8. Arrange the cabbage on plates, drizzle with the dressing, and garnish with the capers, olives, walnuts, fresh herbs, and lemon zest. Finally, drizzle with olive oil, season with salt and pepper, and enjoy.

Notes

If you don't have an oven-safe skillet, you can simply sauté the cabbage in a regular skillet and then transfer it, along with the broth, to a baking dish covered with aluminum foil or a matching lid to steam and bake!
