Oriental potato salad (VEGAN) – quick & easy!

Potato salad with a difference – this oriental potato salad with fresh herbs such as dill, spring onions, pomegranate and roasted pine nuts really is a dream! It’s a quick side dish for any barbecue or picnic and a real eye-catcher! It’s ready in under 30 minutes without a lot of work, making it the perfect vegan potato salad!

About my potato salad

Potato salad is a classic in German cuisine, which is why there are hundreds of recipes for it on the internet. I have “orientalized” my recipe a little – and the result is an absolute taste sensation! The dressing does not require any mayonnaise. The combination of mustard, tahini and olive oil ensures that you don’t miss mayonnaise at all! That’s exactly what makes this potato salad vegan – but without sacrifice. :-).

The pomegranate seeds provide the slightly sweet and sour taste and the perfect all-rounder for me in salads are always coarsely ground pine nuts. If you don’t have pine nuts, you can also use other nuts such as walnuts. Use chopped almonds or walnuts.

Which potatoes for this potato salad

The type of potato determines the consistency and appearance of your salad. Floury potatoes are not suitable for this, as they would fall apart when cut. I therefore recommend only using waxy potatoes. Firm-boiling potato varieties that are almost always available in the shops are Linda, Selma, Ditta, Goldmarie, Exquisa, Back und Grill, Bellaprima, Nicola and a few others. They fall apart a little after cutting, but otherwise keep their shape.

Here I cooked the potatoes a day in advance and then processed them cold the next day. You can also use the warm potatoes to make a salad – just as you like it! So the salad can be served warm or cold:-).

Vegan potato salad – The tahini dressing

The dressing here consists of very few ingredients: Olive oil, lemon, tahini, agave syrup (or honey) and mustard. Most of the ingredients is almost always available – except perhaps for tahini (sesame paste), which you can get in almost any supermarket these days. The combination of mustard and tahini may be a daring one and some people may find it unimaginable – but I promise you it goes really well here and tastes great!

If you’ve never tried potato salad then you should try this recipe definitely try it out! It’s a super tasty and really very simple oriental summer salad, I’m sure you’ll love it as much as I do!

Ingredients
  

  • 250 g Potatoes waxy or predominantly waxy
  • 1 waistband/50-70g fresh dill chopped
  • 2 Bars Spring onions finely chopped
  • 1 medium-sized red onion cut into long, thin strips
  • 1 handful Pine nuts Roasted
  • 1 handful Pomegranate seeds
For the dressing:
  • 50 ml Olive oil
  • 2 tbsp Tahini
  • 1 tbsp Mustard
  • Juice one Lemon
  • 2 tbsp Agave dicksat or another sweetener (e.g. honey)
  • Salt & pepper to taste

Method
 

  1. Place the potatoes in their skins in a pan and cover with clean water. Then bring to the boil.
  2. Salt a little and cook over a medium heat with the lid on. (Depending on size, approx. 30-35 minutes).
  3. Drain the potatoes, allow to evaporate briefly or cool completely.
  4. Place the dill, spring onions and the dressing ingredients in a large bowl and mix together.
  5. Peel the potatoes and cut into any size/small pieces and add directly to the bowl with the dressing.
  6. Add the onions and mix everything well.
  7. Sprinkle with pomegranate and pine nuts and simply enjoy.

Notes

  1. You can add all kinds of vegetables/herbs here, such as parsley, cucumber, peppers - just as you like.
  2. Instead of agave syrup, you can also use something else to sweeten, such as honey or date syrup.
  3. Also great for preparing in advance as a meal prep.
