One Pot Hähnchen mit Reis – schnelles Abendessen

One-Pot Chicken and Rice – Easy Weeknight Dinner

Tender chicken and flavorful rice cooked together in one pan — simple, cozy, and incredibly satisfying. This one-pot chicken and rice dish is perfect for busy weeknights. It’s quick, easy, and made entirely in one pan. Give it a try!

Ingredients
  

  • ca. 6 tbsp olive oil (for sautéing and marinating)
  • 5-8 boneless chicken thighs skin removed; “Pollo Fino”
  • 1 large onion finely diced
  • 4 garlic cloves finely chopped
  • 2 celery stalks finely diced
  • 2 red bell pepper or carrots finely diced
  • 300 g basmati rice rinsed 2–3 times and briefly soaked
  • 600 ml hot vegetable or chicken broth
  • 1 handful frozen peas
  • Salt & pepper to taste

Equipment

  • 1 Pfanne oder Topf mit Deckel

Method
 

  1. Season the chicken thighs with salt, pepper, chili powder, paprika, and olive oil. In a large pan or wide pot, sear the chicken over high heat until browned on both sides. Remove from the pan and set aside.
  2. In the same pan, sauté the onion, garlic, and celery over medium heat until softened. Add the diced vegetables and cook for another 2–3 minutes.
  3. Add the rinsed and drained basmati rice to the vegetables and sauté briefly. Pour in the hot broth, stir well, and return the seared chicken to the pan. Season generously with salt and pepper to taste. The broth should be well seasoned.
  4. Bring everything to a boil, stir in the peas, then cover with a lid. Reduce the heat to low and let the rice steam for 15–20 minutes, or until all the liquid is absorbed.
  5. Remove the pan from the heat, let it rest for a moment, then adjust the seasoning if needed.Serve with a fresh salad and yogurt.
