Chicken with rice always works – especially when everything is cooked in a single pan. This one-pot dish is my go-to recipe for stressful days: uncomplicated and perfect as a quick dinner when you don’t feel like doing a lot of washing up. This is exactly the kind of one-pot dish I love in everyday life – filling and family-friendly ❤️.

It’s hard to imagine modern everyday cooking without one-pot dishes. Everything cooks together, the flavors combine and the rice absorbs the spicy broth perfectly. In this one-pot chicken and rice dish, the meat remains juicy while the rice is fluffy and full of flavor. A real feel-good dish that is easy to adapt – depending on which vegetables are available.

  • Pollo Fino – remove the skin before preparation; this makes the chicken juicier and the dish not too greasy
  • Onion & garlic – forms the aromatic basis of the dish.
  • Celery stalks – bring freshness and a slightly sweet aroma
  • Red peppers or carrots – can be adapted depending on the season and availability; it is important to cut the vegetables into even pieces so that everything cooks at the same time
  • Basmati rice – wash 2-3 times before use until the water is clear
  • Vegetable or chicken stock – gives the rice flavor and ensures succulent cooking
  • Frozen peas – for freshness and a light sweetness at the end
  • Olive oil – for frying
  • Spices – salt, pepper, paprika powder and chili powder

The step-by-step guide

  • Step 1:
    Remove the skin from the pollo fino. Then marinate the chicken with salt, pepper, paprika powder, chili powder and olive oil. Cut the onion, garlic, celery and peppers or carrots into even, small bite-sized pieces. Fry the chicken in a large pan over a medium heat until browned on both sides. Remove and set aside.

  • Step 2:
    Wash the basmati rice 2-3 times until the water runs clear and then soak briefly in fresh water. Meanwhile, sauté the onion, garlic and celery in the same pan (and in the same frying fat) over a medium heat (approx. 3-5 min). Add the chopped vegetables and fry briefly (approx. 2-3 min).
  • Step 3:
    Drain the soaking water from the rice completely and add the drained rice to the pan and sauté for 1-2 minutes.
  • Step 4:
    Deglaze with hot stock, stir well and return the chicken to the pan. Bring to the boil once. Stir in the peas. Put the lid on, reduce the heat and cook for approx. 15-20 minutes until the rice is tender and the liquid has been completely absorbed.
  • Step 5:
    As soon as the liquid has been completely absorbed by the rice, turn off the heat completely. Leave the pan closed for a few more minutes to allow the flavors to infuse and the rice to evaporate perfectly and loosen the dish just before serving.

Ingredients
  

  • ca. 6 tbsp olive oil (for sautéing and marinating)
  • 5-8 boneless chicken thighs skin removed; “Pollo Fino”
  • 1 large onion finely diced
  • 4 garlic cloves finely chopped
  • 2 celery stalks finely diced
  • 2 red bell pepper or carrots finely diced
  • 300 g basmati rice rinsed 2–3 times and briefly soaked
  • 600 ml hot vegetable or chicken broth
  • 1 handful frozen peas
  • Salt & pepper to taste

  • 1 Pfanne oder Topf mit Deckel

Method
 

  1. Season the chicken thighs with salt, pepper, chili powder, paprika, and olive oil. In a large pan or wide pot, sear the chicken over high heat until browned on both sides. Remove from the pan and set aside.
  2. In the same pan, sauté the onion, garlic, and celery over medium heat until softened. Add the diced vegetables and cook for another 2–3 minutes.
  3. Add the rinsed and drained basmati rice to the vegetables and sauté briefly. Pour in the hot broth, stir well, and return the seared chicken to the pan. Season generously with salt and pepper to taste. The broth should be well seasoned.
  4. Bring everything to a boil, stir in the peas, then cover with a lid. Reduce the heat to low and let the rice steam for 15–20 minutes, or until all the liquid is absorbed.
  5. Remove the pan from the heat, let it rest for a moment, then adjust the seasoning if needed.Serve with a fresh salad and yogurt.
