My Chicken Madras Recipe—so delicious!

The diverse and colorful cuisines of India and Pakistan offer countless wonderful dishes. One of these deliciously spicy dishes is Chicken Madras, which is a must-have on any restaurant menu in these countries. I created my Chicken Madras recipe with a lot of love, and I’d love to share it with you. Especially if you love slightly spicier dishes, you shouldn’t miss out on this taste experience.

A special dish from *One Thousand and One Nights*—easy to prepare

If you’d like to cook something special for your family or friends but are short on time, my Chicken Madras recipe is perfect. You can whip up this Madras curry dish quickly and easily and treat your guests to a delicious meal.

Did you know that although this ā€œIndianā€ dish is traditionally prepared in India today, it actually originated somewhere else entirely? The spicy chili pepper was first ā€œimportedā€ from the Caribbean in 1498 and is now an indispensable ingredient in many dishes, including Chicken Madras. This dish originated in England during the colonial era and was simply named after the city of Madras. Today, however, that city is known by a completely different name: Chennai. The name ā€œMadrasā€ itself was coined by sailors, who introduced the term ā€œMae De Deusā€ (translated as ā€œMother of Godā€).

Chicken Madras —also known as Madras curry —has now become a global favorite and is considered a delicacy straight out of *One Thousand and One Nights*. By the way, naan or pea rice make great side dishes to go with it. Are you eager to try making it yourself? If so, I’ll definitely share a few tips with you.  

  1. Never brown the meat with spices for too long, because the spices draw out its moisture, making it unpleasantly dry or tough.
  2. When preparing this dish, I use a food processor to make the delicious garlic and onion paste for my Chicken Madras recipe. If you don’t have a food processor, use an immersion blender or, if necessary, a regular blender. If you’re cooking without any of these tools, chop the onion and garlic as finely as possible. A garlic press can also be helpful if needed.

Chicken Madras and Its Spices

Every Chicken Madras is prepared a little differently. What makes each Chicken Madras recipe unique is its one-of-a-kind spice blend. My spice blend and its wonderful qualities:


Mustard seeds
aren’t just a spice with a great flavor. Mustard seeds are often used in Indian and Pakistani cuisine. They are first briefly sautĆ©ed in hot oil, which allows them to release their full flavor. I used these mustard seeds for this recipe.  

Cumin
Cumin
is also very popular in Indian and Pakistani cuisine. It is particularly well known as a cough suppressant, but it can also stimulate digestion and help regulate blood pressure.

Salt
You use salt every day, but did you know that we need salt to live? It’s essential for your muscles, fluid balance, and digestive system. In the past, salt was also called ā€œwhite gold.ā€

Garam Masala
Garam Masala
is a spice blend, and there’s no exact recipe for it. Every household and region has its own blend. If you want to take your food to the next level, I recommend making your own Garam Masala. Here’s the Garam Masala recipe from my mom and grandma.  

I also use the following ingredients for my Chicken Madras:

  • Chili powder (hot)
  • Cayenne pepper
  • Paprika powder
  • Coriander powder
  • Turmeric

These ingredients are also extremely valuable and beneficial to your body.

My Chicken Madras Recipe—super easy!

Ingredients
  

  • 2 tbsp Ghee Alternatively, use a neutral oil for sautĆ©ing
  • 1 tsp Mustard seeds
  • 1 tsp Cumin
  • 2 large Onion
  • 4 Garlic cloves
  • approx. 15 g Ginger
  • 80 ml Coconut milk
  • 400 g Chicken breast diced
  • 350 g strained tomatoes
  • 100-150 ml Water
Spices:
  • ½ tsp Chili powder (hot)
  • 1 tsp Cayenne pepper
  • 3 tsp Paprika powder
  • 1 tsp Coriander powder
  • ½ tsp Turmeric
  • ½ tsp Garam Masala
Other
  • ½ Lemon Lemon juice
  • something fresh coriander

Method
 

  1. Peel the onion, garlic, and ginger, and blend them in a food processor until they form a paste.
  2. Heat the ghee in a pan. Add the mustard seeds and cumin seeds.
  3. When they start to sizzle (after about 20–30 seconds), add the onion-garlic paste.
  4. SautĆ© over medium heat for 2–3 minutes.
  5. Add the spices and sautƩ for another 2 minutes.
  6. Add the meat and sautƩ briefly (about 40 seconds)
  7. Add the strained tomatoes, water, and coconut milk.
  8. Add salt to taste and adjust the seasoning
  9. Simmer over medium heat for about 15 minutes with the lid on.
  10. Serve with fresh cilantro and a little lemon juice.

Notes

  1. If you don't have a food processor, try to chop the onion and garlic as finely as possible.
  2. Carefully add the water a little at a time and adjust to taste.
  3. To keep the meat juicy, don't brown it with the spices for too long.
  4. I recommend serving this with my pea rice or naan.
