This mango salad with lentils is super tasty, refreshing and very quick to make. The lentils also make it super filling and very nutritious! The highlight for me personally is my oriental dressing made from tahini (sesame paste). I hope you enjoy my mango salad 🧡.
My mango salad – fruity & refreshing
The other day I was in the mood for a fruity, refreshing salad – but at the same time I wanted something nutritious that would keep me full for longer! So I discovered brown lentils in my pantry and combined them with a well-ripened mango. The great thing about lentils is not only their long shelf life, but they are also rich in vegetable protein and healthy fiber. So they also keep you feeling full for a long time! I used pre-cooked lentils from a tin for this recipe. I think they’re great when things have to be quick. But you can also cook the lentils yourself beforehand, it’s up to you!
Oriental mango salad – tahini with date syrup
As always, a good dressing is the heart of a salad. Here I opted for a tahini and date dressing. It went really well with it. The combination of mango, lentils, tahini and dates is simply a dream! It’s best to try it yourself and see for yourself :-). My tip for tahini dressing: always add a little water to the tahini dressing and mix well until you have the desired consistency. Add water little by little.
