Mango salad with lentils and tahini dressing

This mango salad with lentils is super tasty, refreshing and very quick to make. The lentils also make it super filling and very nutritious! The highlight for me personally is my oriental dressing made from tahini (sesame paste). I hope you enjoy my mango salad 🧡.

My mango salad – fruity & refreshing

The other day I was in the mood for a fruity, refreshing salad – but at the same time I wanted something nutritious that would keep me full for longer! So I discovered brown lentils in my pantry and combined them with a well-ripened mango. The great thing about lentils is not only their long shelf life, but they are also rich in vegetable protein and healthy fiber. So they also keep you feeling full for a long time! I used pre-cooked lentils from a tin for this recipe. I think they’re great when things have to be quick. But you can also cook the lentils yourself beforehand, it’s up to you!

Mango salad recipe – the ingredients at a glance

  • Mango
  • Brown lentils (precooked)
  • Tomato
  • Fresh parsley
  • Cucumber
  • Spring onions
  • For the dressing: tahini, lemon, olive oil, date syrup, water, salt

Note: Feel free to use other vegetables or whatever your fridge has to offer. You can customize this salad to your taste.

Oriental mango salad – tahini with date syrup

As always, a good dressing is the heart of a salad. Here I opted for a tahini and date dressing. It went really well with it. The combination of mango, lentils, tahini and dates is simply a dream! It’s best to try it yourself and see for yourself :-). My tip for tahini dressing: always add a little water to the tahini dressing and mix well until you have the desired consistency. Add water little by little.

The step-by-step guide

  • Step 1: Slicing
    Cut the mango, tomatoes, spring onions and cucumber into bite-sized pieces and finely chop the parsley.
  • Step 2: Dressing
    Put all the ingredients for the dressing in a small bowl, mix well and season to taste.
  • Step 3: Combine
    Place everything in a large bowl, pour over the dressing, mix well and enjoy.

  1. You can also cook the lentils yourself instead of using pre-cooked canned lentils. This would add 10-15 minutes to the preparation time.
  2. This salad is also great to prepare in advance.

Mango Salad

The best mango salad

This mango salad is the best summer salad. The combination of mango, lentils, tahini and dates is simply a dream! As always, a good dressing is the heart of a salad. Here I opted for a tahini and date dressing. It went really well with it.
Prep Time 15 minutes
Cook Time 5 minutes
Servings: 2 People
Course: Salad

Ingredients
  

  • 1 mature Mango approx. 200g
  • 2 medium-sized tomato
  • ½ - 1 Cucumber
  • 4 Spring onions
  • 1 Confederation Parsley approx. 50g
  • 1 Can brown lentils (precooked) approx. 250 g
Dressing:
  • 1-2 tbsp Tahini +/- according to taste
  • 2 tbsp Olive oil
  • Juice one Lemon
  • 1-2 tbsp Date syrup +/- according to taste
  • something Water to dilute (approx. 50 ml)
  • Salt & pepper according to taste

Method
 

  1. Cut the mango, tomatoes, spring onions and cucumber into bite-sized pieces and finely chop the parsley.
  2. Place all the ingredients for the dressing in a small bowl and mix well. Add the water spoonful by spoonful until you achieve a creamy consistency. Taste and adjust to taste if necessary.
  3. Place the vegetables and lentils in a bowl. Pour over the dressing and mix well. Season to taste and enjoy.

Notes

  1. You can also cook the lentils yourself instead of using pre-cooked canned lentils. This would add 10-15 minutes to the preparation time.
  2. This salad is also great to prepare in advance.
