This green asparagus quiche is my favorite quiche recipe for spring and summer. I bring it to almost every barbecue or family gathering—it tastes great hot or cold, is easy to prepare ahead of time, and is always a big hit. I hope you have a lot of fun with this vegetarian quiche recipe ❤️

Green Asparagus Quiche – The Ingredients

  • For the crust: wheat flour , Parmesan, cold butter, egg, sour cream or crème fraîche
  • For the filling: green asparagus, cherry tomatoes, garlic, eggs, cream, Parmesan
  • Spices & herbs: salt, pepper, nutmeg, basil
  • Tip: Crème fraîche works just as well as sour cream, and you can substitute grated mountain cheese for Parmesan. If you like it spicier, you can add some lemon zest and/or chili flakes.

Step-by-step instructions

  • Step 1: Prepare the dough
    Quickly knead the flour, Parmesan, butter, egg, and sour cream into a smooth dough. Wrap in plastic wrap and chill for about 1 hour.
  • Step 2: Prepare the vegetables
    Trim or snap off the woody ends of the green asparagus. Blanch in boiling water for about 5 minutes, then rinse under cold water. Cut the tomatoes in half, chop the basil, and peel the garlic.
    Step 3: Prepare the baking dish
    Preheat the oven to 220°C (top and bottom heat). Grease a quiche or tart pan and dust it with a little flour.
    Step 4: Roll out the dough
    Roll out the chilled dough to a thickness of about 3–4 mm, place it in the pan, and form a rim. Prick the bottom several times with a fork.
  • Step 5: Top the crust
    Arrange the asparagus spears and tomato halves evenly on the crust.
  • Step 6: Prepare the filling
    Whisk the eggs with the cream and Parmesan. Season with salt, pepper, and nutmeg. Stir in the basil and finely chopped garlic.
  • Step 7: Bake the quiche
    Pour the mixture evenly over the vegetables. Bake in a hot oven for about 30–35 minutes, until the top is golden brown.

Ingredients
  

Für den Teig:
  • 210 g Weizenmehl
  • 50 g frisch geriebener Parmesan
  • 125 g kalte Butter in Stückchen
  • 1 Ei
  • 4 EL Sauerrahm alternativ: Crème fraîche
Für die Füllung:
  • ca. 350 g grüner Spargel
  • ca. 150 g Cherry-Tomaten
  • 1 kleine Knoblauchzehe
  • 3 Eier
  • 200 ml Schlagsahne
  • 50 g frisch geriebener Parmesan
  • 1 Handvoll frischer Basilikum gehackt
Gewürze:
  • Salz
  • Pfeffer
  • Frisch geriebene Muskatnuss

Method
 

  1. Mehl, Parmesan, Butter, Ei und Sauerrahm zügig zu einem glatten Teig verkneten. In Frischhaltefolie wickeln und 60 Minuten kalt stellen.
  2. Gemüse vorbereiten.Spargelenden abschneiden oder abknicken. Spargel ca. 5 Minuten in kochendem Wasser blanchieren, dann kalt abschrecken. Tomaten halbieren. Basilikum waschen und fein hacken. Knoblauch schälen.
  3. Backofen auf 220 °C Ober-/Unterhitze vorheizen. Eine Quicheform (ca. 26 cm) fetten und leicht mit Mehl ausstreuen.
  4. Teig 3–4 mm dick ausrollen, in die Form legen und einen Rand formen. Boden mit einer Gabel mehrfach einstechen.
  5. Spargelstangen und Tomatenhälften dekorativ auf dem Teigboden verteilen.
  6. Eier, Sahne und Parmesan verquirlen. Mit Salz, Pfeffer und Muskat würzen. Basilikum und gepressten Knoblauch unterrühren.
  7. Quiche backen.Den Guss gleichmäßig über das Gemüse gießen. Im Ofen ca. 30–35 Minuten backen, bis die Oberfläche goldbraun ist.
