Green shakshuka – what is it?
Shakshuka is traditionally made with tomatoes – the green version doesn’t need any tomatoes at all and instead uses green vegetables such as leek, zucchini and spinach. This makes the dish particularly fresh, healthy and perfect for brunch or breakfast ideas.
I love this version above all because it is quick to prepare and still has a lot of flavor.

If you are sensitive to spiciness or are cooking for children, you can simply remove the seeds and white inner skin from the fresh chili. This is where most of the heat is. For more heat, use the chili with the seeds or add chili flakes.
