Fennel is one of those vegetables that you either love or have never really tried. I particularly like fennel recipes because it is so versatile – whether baked, braised or raw in a salad. Here you’ll find my favorite recipes with fennel that are easy to make, taste great and show just how many different ways you can prepare fennel .

Fennel – you can use it in so many ways

With its light aniseed aroma, fennel brings freshness to many dishes. It tastes warm and soft from the oven, but also raw and crunchy in salads. It is also light, easily digestible and goes well with citrus fruits or fish. If you want to prepare fennel, you can bake it, steam it, roast it or enjoy it raw – the vegetable always remains aromatic and versatile.

1. baked fennel from the oven

A simple oven dish in which the fennel softens and caramelizes slightly. Ideal as a side dish or light main course. Perfect if you want to prepare fennel in an uncomplicated way.

Preparing fennel – tips

  • Recognizing fresh fennel
    When buying, look for firm tubers with lush green, fresh umbels. The outer layers should be smooth and light in color, not dry or brown. Small tubers often have a more delicate flavor.
  • Clean and cut correctly
    First cut off the stalks and the tender green – you can use this later for garnishing or for soups. Then halve the bulb lengthwise, cut out the stalk in a wedge shape and cut the fennel into strips or wedges, depending on the recipe.
  • Enjoy fennel raw
    Finely sliced, fennel is crunchy and fresh – perfect for salads. Combined with a little orange, apple or lemon, it has a pleasant sweetness and freshness.
  • Cooking or braising fennel
    Steaming or braising fennel makes it soft and mild. A squeeze of lemon, orange juice or a little hot stock enhances the flavor. Important: do not cook for too long, otherwise it will lose its aroma
  • 5. prepare fennel in the oven
    Fennel develops its full flavor in the oven. Simply roast it with olive oil, salt and herbs until it is lightly browned. This gives it a sweet note and makes it wonderfully soft.
  • 6. combination ideas
    Fennel goes great with citrus fruits, tomatoes, fish, parmesan, oranges or Mediterranean spices. If you like it stronger, you can combine it with harissa, chili or garlic.

Fennel recipe

Baked fennel with orange & pine nuts - so delicious

Aromatic oven dish with fennel, fresh orange and crunchy pine nuts - easy to prepare, healthy and perfect as a vegetarian side dish or light main course.

Ingredients
  

  • 2 fresh Fennel bulbs
  • 50 g Butter
  • 4 tbsp Olive oil + more just before serving
  • 30 g Pine nuts
  • 2 Organic Oranges
  • 2 tbsp Capers
  • 3 tbsp Breadcrumbs
  • ½ tsp Cane sugar
  • Salt & pepper to taste

Equipment

  • 1 Auflauf- oder Ofenfom Alternative: ovenproof pan

Method
 

  1. Preheat the oven to 230 degrees. Gently warm the oven dish in it.
  2. Cut the fennel bulb in half, remove the stalk in the middle and the hard stalks at the top. Put the green leaves to one side for later.
  3. Cut each fennel half again into 4-6 equal pieces.
  4. Pour the butter and 2 tablespoons of olive oil into the warm casserole dish and place the fennel flat side down.
  5. Spread the remaining olive oil over the top and bake in the oven for approx. 15-20 minutes. Until it slowly starts to take on a light color.
  6. Meanwhile, halve one orange and then cut into slices. Squeeze the juice out of the other orange. Chop the green fennel leaves later for decoration and flavor.
  7. Remove the fennel from the oven and carefully turn each piece. Sprinkle with orange juice, salt & pepper, the pieces of orange, cane sugar, capers, pine nuts and breadcrumbs.
  8. Bake again in the oven for approx. 15-20 minutes. Just before serving, drizzle with a little olive oil and enjoy.
