Fattoush with chickpeas (Arabic bread salad) – so delicious!

Fattoush is an Arabic salad – super simple and extremely tasty! The special thing about fattoush is the crispy baked bread that is mixed with the salad. I added chickpeas to my recipe, which is not that common – but I think it went really well together! I hope you have lots of fun with my fattoush recipe.

About my fattoush with chickpeas

This delicious bread salad often consists of cucumber, tomato, parsley and deep-fried thin flatbread. I topped my fattoush with romaine lettuce and chickpeas. Chickpeas don’t really belong in a classic fattoush. But I think they fit in really well here. Of course, you can also leave them out. Or add another vegetable. As with almost all my salad recipes, the same applies here: There is no limit to your creativity. YOU can adapt it to suit your taste. 😊

My alternative: instead of frying the flatbread, I briefly put it in the oven. If, like me, you use the thin Arabic (or Lebanese) bread, make sure that it becomes crispy very quickly in the oven. So just keep an eye on it:-). The result is definitely a dream!

Fattoush salad – the dressing

In addition to the crispy baked flatbread, the dressing is also a real highlight. Let’s take a look at all the ingredients for the dressing at a glance:

  • Tahini
  • Olive oil
  • Honey (vegan alternative: agave syrup, date syrup)
  • Lemon
  • Water
  • 1 pinch of salt
  • Pomegranate syrup
  • Sumac. If you don’t have sumac, you can leave it out.

You can find all the ingredients in any well-stocked supermarket these days. You are sure to find sumac and tahini in a Turkish or Arabic supermarket. I used this tahini for this fattoush salad.

Fattoush recipe – here’s how!

  1. Preheat the oven to 180 degrees.
  2. Cut the Arabic flatbread into bite-sized pieces. Mix well with olive oil and salt and bake in the oven for 3-5 minutes.
  3. Place all the ingredients for the salad in a large bowl.
  4. Place the ingredients for the sauce in a small bowl one after the other and mix well. Season to taste – add more acid (lemon) or more sweetness (honey) if necessary.
  5. Spread the dressing over the salad. Top with the bread potato chips and pomegranate syrup and enjoy.

Ingredients
  

For the bread potato chips
  • 2 thin Arabic/Lebanese flatbreads
  • 50 ml Olive oil to spread on the bread
  • ½ tsp salt
For the salad
  • 1 Head Romaine lettuce washed & coarsely chopped
  • ½ Cucumber diced
  • 1 Tomato diced
  • 1 Can precooked chickpeas
  • 50 g fresh mint chopped
  • 50 g fresh parsley chopped
  • 2 Bars Spring onions
For the dressing
  • 3 tbsp Tahini
  • 3 tbsp Olive oil
  • 2 tbsp Honey Vegan alternative: agave syrup or date syrup
  • ½ Lemon Lemon juice
  • something Water for the creamy consistency
  • 1 Pinch salt
  • 1 tsp Sumac spice optional
other:
  • 3 tbsp Pomegranate syrup

Method
