This festival is a very special celebration for Muslims where the whole family and/or friends get together to eat and have a good time. Here I would like to introduce you to over 10 Eid dishes. What is Ramadan?

Ramadan is a significant time in the Islamic calendar, celebrated by millions of Muslims around the world. It is a month of devotion, fasting, prayer and self-reflection. During this time, Muslims abstain from food and drink from sunrise to sunset to deepen their spiritual connection and show gratitude.

Aside from its spiritual significance, Ramadan is also a time when culinary creativity flourishes. From rich soups to exquisite desserts, there is an abundance of traditional dishes that are shared with family and friends. Every household has its own favorite recipes and traditions that make this time of year special.

Iftar & Sahur – what does that mean?

“Iftar” and “Sahur” are two terms used in connection with the Islamic fasting month of Ramadan.

  • Iftar: This is the Arabic word for breaking the fast. It refers to the meal that Muslims eat after sunset during Ramadan to break their fast. The time of iftar is announced by the call to prayer for the evening prayer, also known as “adhan”.

  • Sahur: This is the meal that Muslims eat before sunrise during Ramadan, before they fast. It is often referred to as ‘breakfast’ before the start of fasting. Sahur is typically eaten before dawn and ends with the call to prayer for the morning prayer, the “Fajr-Adhan”.

During Ramadan, soups are popular for their nutrients and soothing effect. Breads, such as pita or herb breads, are a main component and provide essential carbohydrates. At the pre-dawn sahur meal, protein and carbohydrate-rich options such as egg dishes or porridge are common to fortify believers for the fasting day. I have summarized some recipes for you below.

Eid dishes - the best recipes

Ingredients
  

For The Masala:
  • 150 ml Oil e.g. sunflower oil
  • 4 Chicken thighs halved & skinned
  • 2 large onion or 5 small, thinly sliced strips
  • 7 Garlic cloves
  • approx. 15 g Piece of ginger
  • 4 small tomato diced
  • 4 tbsp Mild yogurt 3,5%
  • 2 medium Carrots Roughly diced
  • 1 handful Dried plums
Spices:
  • 3 tsp Biriyani Masala You can find the recipe below
  • 1 tsp Turmeric
  • 1 tsp Chili (hot)
  • salt to taste
For the rice:
  • 500 g Basmati rice
  • 1 Bay leaf
  • 1 Star anise
  • 2 Carnations
  • 1,5 tsp salt
Other:
  • ½ tsp Saffron
  • 50-100 ml lukewarm water
  • 1 handful fresh coriander chopped
  • 1 handful fresh mint chopped
  • 1 Organic Lemon cut into thin strips
For the biryani masala:
  • 2 Aniseed stars
  • 5 green Cardamom pods
  • 4 Carnations
  • 2 Large black Cardamom pods optional
  • 1 Mace
  • 5 Dried red Chili pepper
  • 1,5 tsp Ajwain optiona
  • 1,5 tsp Nutmeg powder
  • 1,5 tsp Jeera (cumin)
  • 1,5 tsp Peppercorns
  • 1,5 tsp Fennel seeds
  • 1,5 tsp Coriander seeds

Equipment

  • 1 spice grinder for the Briyani Masala
  • 1 Mortar and pestle  For the garlic and ginger paste

Method
 

  1. Grind the saffron threads into a powder in a mortar. Add lukewarm water or 2 ice cubes to dissolve the saffron powder. Set aside for later.
  2. Wash the rice thoroughly and soak in water.
  3. Meanwhile, heat the oil in a large saucepan and sauté the onions over a medium heat until soft and golden brown (may take up to 20 minutes).
  4. Remove 2/3 of the onion (preferably without fat) and set aside for later.
  5. Place the meat in the pan and sear on both sides.
  6. Add the garlic-ginger paste, biriyani masala, chili powder and turmeric. Fry everything well over a medium heat.
  7. Add the tomatoes and yogurt and sauté for a further 1-2 minutes.
  8. Add the potatoes, dried plums and 1/3 of the 2/3 of the fried onions.
  9. Simmer over a medium heat for a further 5-7 minutes until the oil starts to become visible and the meat is cooked through. Salt to taste
  10. Remove the pan from the heat and set aside for later.
Rice:
  1. Cook the rice in plenty of water with cloves, bay leaf and star anise. Add salt to taste and when it is 90% cooked, sieve and drain (pasta method).
Merge:
  1. In a large pot, first layer the rice and then the masala, one after the other. Add mint, coriander, lemon slices and saffron water in between, the last layer should be rice, then add the herbs, saffron and onions. Cover the pan tightly and finish cooking on a low heat for about 20 minutes. If necessary, place a tea towel in between so that no steam can escape.
For Biryani Masala:
  1. Place all the ingredients in a small spice grinder and blend to a powder. This biryani masala is for approx. 6 teaspoons of biryani masala. This means you can cook 2 biryani with it 🙂

Notes

  1. I recommend cooking the rice fresh. This is because it is advantageous for layering when it is still warm and wet. This makes it easier to finish cooking under steam later.
  2. For the vegan/vegetarian version: Instead of chicken, you can use vegetables, tofu or paneer.
