About My Quick Pasta Dish

This dish is perfect for asparagus season. Green asparagus is super easy to prepare and adds a great crunch to the tagliatelle with salmon. The best part about this recipe: You don’t need an extra pot! Just cook the asparagus right along with the pasta for the last 3 minutes. Plus, here’s my favorite trick: The starchy pasta water makes the sauce wonderfully creamy—without any flour at all. You should definitely try it yourself :-).

Tagliatelle with Salmon—the Ingredients

Here’s an overview of the ingredients. As always, you’ll find the exact quantities at the very bottom of the recipe card.

  • Salmon: It’s the star of the dish and provides valuable omega-3 fatty acids. Diced and skinless.
  • Tagliatelle: These wide ribbon noodles soak up the creamy sauce especially well, but you can, of course, use any pasta of your choice.
  • Green asparagus: Simply snap off the tough ends with your hands (they’ll break off at the right spot) and cut them into pieces about 3 cm long.
  • Red Onion & Garlic: These are finely chopped and add a subtle sweetness and flavor.
  • Cream & Vegetable Broth: Together, they form the foundation for the creamy sauce base.
  • Organic lemon: The zest adds an instant burst of freshness to the pasta.
  • Parmesan: When freshly grated, it thickens the sauce.
  • Dill: A classic accompaniment to salmon that perfectly rounds out the flavor.

Step-by-step instructions

  • Step 1: Preparation: Dice the onions and mince the garlic. Snap off the tough ends of the asparagus and cut the remaining asparagus into pieces about 3 cm long. Bring water to a boil for the pasta.
  • Step 3: Heat oil in a wide skillet. Sauté the onions and garlic over medium heat. Deglaze with vegetable broth and cream, then season with salt and pepper. Let it reduce briefly.
  • Step 3: Gently place the salmon cubes into the sauce, add the lemon zest and dill, and let everything simmer gently over medium heat for about 3–4 minutes.
  • Step 4: Meanwhile, cook the pasta according to the package directions. Add the asparagus pieces to the pot 3 minutes before the pasta is done.
  • Step 5: As soon as the pasta is al dente and the asparagus is cooked, remove both from the cooking water using a colander or tongs, add them directly to the salmon sauce, and gently toss to combine.
  • Step 6: Add about 2–3 ladles of pasta water and the Parmesan, and gently stir everything together until creamy. Add more pasta water if needed. Season to taste with salt and pepper.
  • Step 7: Sprinkle with more Parmesan and a little dill, and enjoy!

Ingredients
  

  • 350 g Lachs ohne Haut & gewürfelt
  • 400 g Tagliatelle
  • 200 g Grüner Spargel harte Enden abgeknickt, in 2–3 cm Stücke geschnitten
  • ca. 30 ml Olivenöl (so viel dass der Topfboden gut bedeckt ist)
  • 18 g Knoblauch gehackt oder gerieben
  • 2 rote Zwiebeln klein gewürfelt
  • 300 ml Gemüsebrühe
  • 250 ml Sahne
  • ca 2-3 Kellen Nudelwasser
  • 1 Bio-Zitrone Abrieb der Zitrone
  • 3 EL frischer Dill gehackt
  • Salz & Pfeffer nach Geschmack
  • 1 gute Prise Muskatnuss
  • ca. 3 EL Parmesan (gerieben) nach Geschmack mehr oder weniger

Equipment

Method
 

  1. Vorbereitungen: Zwiebeln würfeln, Knoblauch klein hacken. Die harten Enden vom Spargel abknicken und den restlichen Spargel in ca. 3 cm lange Stücke schneiden. Wasser für die Pasta zum Kochen aufsetzen.
  2. Öl in einer breiten Pfanne erhitzen. Zwiebeln und Knoblauch bei mittlerer Hitze darin anschwitzen. Alles mit Gemüsebrühe und Sahne ablöschen und mit Salz & Pfeffer würzen. Kurz einkochen lassen.
  3. Die Lachswürfel vorsichtig in die Soße legen, Zitronenabrieb und Dill hinzufügen und alles bei mittlerer Hitze für ca. 3–4 Minuten sanft köcheln lassen.
  4. Währenddessen die Pasta nach Packungsanweisung kochen. Die Spargelstücke 3 Minuten vor Ende der Garzeit mit in den Topf geben.
  5. Sobald die Pasta al dente und der Spargel gar ist, beides mit einem Sieb oder einer Zange vorsichtig aus dem Kochwasser holen, direkt zur Lachs-Soße geben und vorsichtig miteinander vermengen.
  6. Ca. 2–3 Kellen Nudelwasser sowie den Parmesan dazugeben und alles vorsichtig cremig vermischen. Bei Bedarf noch mehr Nudelwasser hinzugeben. Mit Salz & Pfeffer abschmecken.
  7. Mit noch mehr Parmesan und etwas frischem Dill bestreuen und genießen!

Tipp: Für mehr Aroma kannst du die Lachswürfel vor dem Hinzufügen zur Sauce kurz separat in etwas Butter scharf anbraten und beiseitestellen. Gib sie dann erst ganz zum Schluss wieder in die cremige Sauce.
