My family loves this lasagna recipe —as soon as I say we’re having lasagna, everyone gets excited right away. And no matter how much I make, it’s all gone by the end, and that’s exactly what makes me especially happy. What goes into a classic lasagna?

If you just want to make a simple lasagna recipe, you don’t need any fancy ingredients—just a good base:

  • Ground meat and tomato sauce
  • Béchamel sauce
  • Lasagna sheets (no pre-cooking required)
  • Grated cheese —I prefer mozzarella for the layers and Parmesan for the béchamel sauce

Lasagna Recipe – The Ingredients

Here’s an overview of the ingredients. As always, you’ll find the exact quantities at the very bottom of the recipe card:

  • Onion, garlic, carrot, celery, bell pepper
  • ground beef
  • Tomato paste, strained tomatoes
  • Red wine or grape juice (dark) for an alcohol-free version
  • Beef broth
  • Spices: thyme, oregano, bay leaves, basil
  • Mozzarella
  • Lasagna sheets
  • For the béchamel sauce: butter, flour, milk, nutmeg, Parmesan

Tip: You can customize the vegetables as you like or switch to lentils for a vegetarian version.

How to Make Lasagna: Step-by-Step Instructions

  • Step 1. Prepare the meat sauce (Bolognese)
    Sauté the onions, carrots, celery, and bell peppers. Brown the ground meat and garlic, deglaze with red wine (or dark grape juice for an alcohol-free version), then add the tomatoes, broth, and herbs. Let everything simmer for 30–45 minutes, until the sauce is nice and creamy.

  • Step 2. Make the béchamel sauce.
    Melt the butter, stir in the flour, and cook briefly. Gradually stir in the milk, then season to taste with nutmeg, salt, pepper, and Parmesan. The sauce should be creamy and smooth.

Ingredients
  

For the meat sauce (Bolognese):
  • 1 tbsp Olive Oil
  • 1 large onion finely diced
  • 1 large carrot finely diced
  • 1 Celery stalk finely diced
  • 1 red peppers diced
  • 750 g Minced beef
  • 4 Garlic cloves finely chopped
  • 180 ml Red wine dark grape juice or more beef broth as a non-alcoholic alternative
  • 700 ml strained tomatoes
  • 3 tbsp Tomato Paste
  • 2 Bay leaves
  • 2 tsp dried thyme
  • 1 tbsp dried oregano
  • 375 ml Beef broth
  • 1 tsp of salt
  • ½ tsp black pepper
  • 3 tbsp fresh basil finely chopped
For the béchamel sauce:
  • 50 g Butter
  • 50 g Flour
  • 480 ml Milk
  • ¼ tsp grated nutmeg
  • 60 g grated parmesan
  • Salt and pepper to taste
In addition:
  • 250 g Lasagna sheets uncooked
  • 200 g grated mozzarella
  • 2 tbsp fresh parsley chopped (for garnish)

For the meat sauce (Bolognese):
  1. Heat the olive oil in a large skillet. Sauté the onion, carrot, celery, and bell pepper over medium heat for about 4 minutes, until the vegetables are tender.
  2. Add the ground meat and garlic and sauté for 8–10 minutes.
  3. Deglaze with red wine or grape juice (for the non-alcoholic version) and let it simmer for about 5 minutes, until the liquid has reduced by half.
  4. Add the pureed tomatoes, tomato paste, bay leaves, thyme, oregano, broth, salt, and pepper. Stir well and let simmer uncovered over low heat for 30–45 minutes. Finally, stir in the fresh basil.
For the béchamel sauce:
  1. Melt the butter in a saucepan, stir in the flour, and cook for 30 seconds. Gradually stir in the milk, stirring constantly. Season to taste with nutmeg, salt, pepper, and Parmesan. Stir until the sauce thickens.
  2. Preheat the oven to 180°C (top and bottom heat) or 160°C (convection).
Layering & baking:
  1. Spread a little meat sauce in a baking dish (about 25×20 cm). Place lasagna noodles on top, then layer with meat sauce and béchamel sauce. Repeat until all ingredients are used up (about 3 layers), finishing with béchamel and mozzarella.
  2. Bake in the oven for 45 minutes, until the lasagna is golden brown and bubbling. Let it rest for 5–10 minutes before serving, then sprinkle with parsley.
