  • Coffee: Coffee can be replaced by black tea or liquid butter.

  • Mascarpone: An alternative could be whole milk cream cheese to achieve a similar effect.
  • Quark: The quark adds a pleasant freshness to the cream. Greek yoghurt can be used as a substitute to make the cream lighter.
  • Sugar and vanilla sugar: If necessary, they can be replaced with other sweeteners such as honey or maple syrup.
  • 1 organic lemon: A squeeze of fresh lemon juice & lemon zest adds freshness and lightness to the cream. Fresh orange juice can be used as an alternative.

Dessert in a glass: step-by-step instructions

  • Step 1: Roughly crumble the speculoos cookies. Layer in glasses or a baking dish and drizzle with strong coffee.
  • Step 2: Spread the raspberries on top.
  • Step 3: Whip the cream until stiff. Mix the mascarpone, quark, sugar, vanilla and lemon juice, lemon zest until smooth. Fold in the cream to create an airy cream.
  • Step 4: Spread the cream over the raspberries. Repeat the layers. Chill for at least 2 hours.
  • Step 5: Decorate with raspberries and speculoos before serving.

Ingredients
  

  • approx. 400-500 g Speculoos cookies
  • approx. 100 ml Coffee alternative: liquid butter
For the cream layer:
  • 250 ml Whipped cream
  • 250 g Mascarpone
  • 250 g Quark
  • approx. 3 tbsp Sugar +/- to taste
  • 1 Pck. Vanilla sugar
  • 1 tbsp fresh lemon juice & a little lemon zest from organic lemon
  • approx. 300 g Frozen raspberries +/- to taste
Miscellaneous/decoration:
  • Cookies & raspberries for decoration

Method
 

  1. Make a strong coffee and leave to cool slightly. Place the Spekulatius cookies in a sealable bag and crush with a rolling pin or other heavy object until you have coarse crumbs - keep a few whole cookies for decoration later.
  2. For the cream layer, whip the whipped cream until stiff. In a separate bowl, mix together the mascarpone, quark, sugar, vanilla sugar and lemon juice until smooth. Carefully fold the whipped cream into the mascarpone mixture until you have an airy cream. Taste and adjust to taste (more sugar or more lemon juice...)
  3. Divide the speculaas crumbs evenly between the 6 glasses. Then drizzle the coffee over the crumbs so that they are slightly moistened.
  4. Place the frozen raspberries evenly on top of the speculoos crumbs.
  5. Spread some of the cream evenly over the raspberries in the glasses.
  6. Repeat the process with another layer of speculoos crumbs, raspberries and cream. Decorate the last layer as desired.
  7. Chill the glasses in the fridge for at least 2 hours to allow the flavors to develop.
