Biryani. Today I would like to introduce you to a very special recipe: Chicken Biryani! I associate many wonderful memories from my life with this dish. This dish was and still is part of almost every celebration I attended as a child ❤️.

Biryani – The queen of all dishes

For us Pakistanis and Indians, biryani is much more than just a dish. It not only nourishes the body, but also the soul and is often referred to as the “queen of all dishes“. So it’s no wonder that it has a special place in our culture and at celebrations.

Chicken biryani is an aromatic rice dish with chicken, whose name is derived from “biryani” (roasted or fried). This culinary highlight is not only found in Pakistan and India, but also in Persia. What’s exciting is that the preparation varies slightly from region to region and from household to household – everyone has their own special touch. Today I’m sharing my recipe for chicken biryani with you, the way I learned it from my mom. With these step-by-step instructions, you can bring a piece of Pakistan to your dining table and delight your family, friends or loved ones. Let’s go!

Chicken biryani – the ingredients at a glance

  • Basmati rice: For the perfect result, I recommend “extra long” basmati rice, but it also works with normal basmati rice. The time given in the recipe may vary depending on the variety/brand.
  • Bay leaf, star anise and cloves: these spices give the rice an irresistible aroma of 1001 nights.
  • Chicken thighs: Juicy and aromatic – ideal for biryani. For a vegan or vegetarian version, you can replace chicken thighs with tofu, vegetables or paneer.
  • Potatoes: In southern Pakistan, potatoes are a must, whereas in the north they are often left out. So the choice is yours!
  • Garlic & ginger: Indispensable in Pakistani and Indian cuisine.
  • Yoghurt: A mild yoghurt with a fat content of 3.5% is perfect here.
  • Dried plums: They provide a slight sweetness. Alternatively, you can use dried apricots or raisins.
  • Saffron: A luxury spice that not only provides a great color, but also a unique taste. If saffron is too expensive for you, you can use food coloring, but saffron is worth it!
  • Onions: Thinly sliced and plentiful – large onions are ideal for the perfect biryani base.
  • Tomatoes: Fresh tomatoes are great, but a can of chopped tomatoes is a practical alternative.
  • Biryani Masala: The heart of the dish! You can find my recipe for biryani masala below.
  • Spices: In addition to biryani masala, you will need turmeric, chili powder and salt – all to taste.
  • Fresh herbs: coriander and mint are a must! If you don’t like coriander, you can replace it with chopped parsley or simply leave it out.
  • Lemon: The zest goes into the pot, so it should definitely be an organic lemon.

Biryani recipe – step-by-step instructions for

  • Step 1: Prepare the saffron. Grind the saffron threads into a fine powder in a mortar. Then dissolve with a little lukewarm water or 2 ice cubes. Set aside.
  • Step 2: Preparations: Wash the rice thoroughly and soak in water. Cut the onions into long strips.
  • Step 3: Fry the onions. Add the oil to a pan and sauté the onion over a medium heat until lightly golden brown. Remove 1/2 of the onions and set aside for later.
  • Step 4: Brown the meat.Add the chicken together with the garlic-ginger paste, biryani masala (see below for more info), chili powder and turmeric to the remaining onions in the pan. Fry everything on all sides over a medium heat.
  • Step 5: Add the yogurt & tomatoes. Add the tomatoes and yogurt to the pan and sauté for a further 1-2 minutes.
  • Step 6: Add the potatoes & plums. Add the potatoes and dried plums. Continue to simmer over a medium heat until the oil is visible and the meat is cooked. Add salt to taste. Remove the pan from the heat and set aside.
  • Step 7: Finish the masala. Remove the pan from the heat and set aside for later.
  • Step 8: Cook the rice. Drain the soaking water from the rice. Cook the rice in plenty of water with cloves, star anise and bay leaf (as with the pasta method). As soon as the rice is 80% cooked, strain and drain.
  • Step 9: Build up the layers. In a large pot, first layer the rice, then the chicken and potato sauce (masala). Spread fresh mint, coriander, lemon slices and the prepared saffron water in between. Continue layering until all the ingredients have been used. The last layer should be rice. Spread the herbs, saffron water and golden brown onions on top again.
  • Step 10: Final cooking.Cover the pot tightly and leave to cook on a low heat for approx. 20 minutes. If necessary, place a tea towel between the pot and the lid to prevent steam from escaping.

What do you eat with chicken biryani?

A refreshing yogurt and mint dip goes well with chicken biryani. You can also find the recipe for this on my blog. But a simple cucumber raita or a tomato and cucumber salad is also a great accompaniment.

Biryani masala recipe – my spice mix

Biryani masala is a spice mixture for which there is no exact recipe. Every household has its own mixture. I would like to introduce you to our own recipe today. There are now also ready-made biryani masala spice mixes. Unfortunately, these still contain a lot of additives. Besides, a dish simply tastes 1000 times better when it is prepared with freshly ground spices.

  • Jeera (cumin)
  • Nutmeg powder
  • Coriander seeds
  • Fennel

Ingredients
  

Für Das Masala:
  • 150 ml Öl zb. Sonnenblumenöl
  • 4 Hähnchenschenkel halbiert & enthäutet
  • 2 große Zwiebeln oder 5 kleine, feine dünne Streifen geschnitten
  • 7 Knoblauchzehen
  • ca. 15 g Ingwerstück
  • 4 kleine Tomaten gewürfelt
  • 4 EL milder Joghurt 3,5%
  • 2 mittlegroße Karotffeln grob gewürfelt
  • 1 handvoll getrocknete Pflaumen
Gewürze:
  • 3 TL Biriyani Masala Das Rezept findest du weiter unten
  • 1 TL Kurkuma
  • 1 TL Chili (hot)
  • Salz nach Geschmack
Für den Reis:
  • 500 g Basmatireis
  • 1 Lorbeerblatt
  • 1 Sternanis
  • 2 Nelken
  • 1,5 TL Salz
Sonstiges:
  • ½ TL Safran
  • 50-100 ml lauwarmes Wasser
  • 1 handvoll frischer Koriander gehackt
  • 1 handvoll frische Minze gehackt
  • 1 Bio Zitrone in feine dünne Streifen geschnitten
Für das Biryani Masala:
  • 2 Anissterne
  • 5 grüne Kardamomkapseln
  • 4 Nelken
  • 2 schwarze große Kardamomkapseln optional
  • 1 Muskatblüte
  • 5 getrocknete rote Chili
  • 1,5 TL Ajwain optiona
  • 1,5 TL Muskatpulver
  • 1,5 TL Jeera (kreuzkümmel)
  • 1,5 TL Pfefferkörner
  • 1,5 TL Fenchelsamen
  • 1,5 TL Koriandersamen

Equipment

Method
 

Vorbereitungen:
  1. Safran vorbereiten.Safranfäden in einem Mörser zu feinem Pulver zermahlen. Mit etwas lauwarmem Wasser oder 2 Eiswürfeln auflösen. Beiseite stellen.
  2. Den Reis gründlich waschen und in Wasser einweichen. Die Zwiebeln in längliche Streifen schneiden.
Masala zubereiten:
  1. Zwiebeln anbratenDas Öl in einem großen Topf erhitzen und die Zwiebeln bei mittlerer Hitze anschwitzen, bis sie goldbraun sind. Die Hälfte der Zwiebeln herausnehmen und für später beiseite stellen.
  2. Das Hähnchen zusammen mit der Knoblauch-Ingwer-Paste, Biryani Masala (siehe weiter unten für das Rezept), Chilipulver und Kurkuma zu den verbleibenden Zwiebeln in den Topf geben. Alles bei mittlerer Hitze rundherum anbraten.
  3. Die Tomaten und den Joghurt in den Topf geben und 1–2 Minuten weiter anbraten.
  4. Kartoffeln und getrocknete Pflaumen hinzufügen. Alles bei mittlerer Hitze weiter köcheln lassen, bis das Öl sichtbar wird und das Fleisch gar ist. Nach Geschmack salzen.
  5. Den Topf vom Herd nehmen und beiseite stellen.
Reis zu 80% Kochen:
  1. Das Einweichwasser des Reises abgießen. Den Reis in reichlich Wasser mit Nelken, Sternanis und Lorbeerblatt kochen (wie bei der Pasta-Methode). Sobald der Reis zu 80 % gar ist, abseihen und abtropfen lassen.
Schichten & Finales Garen:
  1. In einem großen Topf zuerst eine Schicht Reis, dann eine Schicht Hähnchen-Kartoffel-Soße (Masala) geben. Zwischendurch frische Minze, Koriander, Zitronenscheiben und das vorbereitete Safranwasser verteilen. So lange schichten, bis alle Zutaten aufgebraucht sind. Die letzte Schicht sollte Reis sein. Obenauf nochmals die Kräuter, das Safranwasser und die restlichen goldbraunen Zwiebeln verteilen.
  2. Den Topf gut verschließen und bei niedriger Hitze ca. 20 Minuten garen lassen. Falls nötig, ein Geschirrtuch zwischen Topf und Deckel legen, damit kein Dampf entweicht.
Für Biryani Masala:
  1. Alle Zutaten in einer kleinen Gewürzmühle geben und zu einem Pulver mixen. Dieses Biryani Masala ist für ca. 6 TL Biryani Masala. D.h. du kannst damit 2 mal Biryani kochen 🙂

Notes

  1. Ich empfehle, den Reis frisch zu kochen. Es ist vorteilhaft, wenn er beim Aufschichten noch warm und leicht feucht ist, da er so später unter dem Dampf besser durchgaren kann.
  2. Für die vegane oder vegetarische Variante kannst du das Hühnchen einfach durch Gemüse, Tofu oder Paneer ersetzen. So erhältst du eine köstliche und vielseitige Alternative, die ebenfalls wunderbar schmeckt!
