My cauliflower curry – vegan, simple, delicious!
I’ve had some cauliflower and fresh spinach leaves in my fridge for a while, which absolutely had to be used. That’s how the idea for this delicious cauliflower curry recipe came about. What I love about curry dishes is their variety, simplicity and, of course, the fact that they taste so delicious. Above all, curry dishes are great for avoiding meat from time to time. That’s exactly why I’m making this delicious vegan curry today. I baked the cauliflower briefly in the oven beforehand, which gives this dish a very special flavor thanks to the roasted aromas it produces.
Vegan curry – The ingredients
In addition to cauliflower and spinach leaves, I have used some spices here, such as garam masala and coriander powder, which in my opinion should not be missing in any curry. Of course, my beloved garlic and ginger paste should not be missing here either, for which I crush the ginger and garlic briefly in my mortar. Chopped tinned tomatoes and coconut milk make for a creamy sauce. Instead of canned tomatoes, you can also use strained tomatoes or fresh tomatoes. Just see what your pantry has to offer :).
