Today I’m showing you my favorite winter salad : beet salad with oranges & couscous. The name alone sounds so incredibly delicious, doesn’t it? And it’s exactly as it sounds! This beet recipe is very easy and really quick to make. I hope you enjoy my beet salad recipe ❤️.

Beet salad with oranges – the perfect winter salad

This salad is one of my absolute favorites. I’m sure many of you are familiar with the situation where you don’t always manage to get the nutrients and vitamins you need in everyday life. But with my beet salad, it’s a breeze! And the beet, oranges and fresh herbs make it a real vitamin bomb. Not only that, but the taste is a real highlight thanks to the fresh and seasonal oranges. They taste best in the winter months!

Beet pre-cooked or not pre-cooked?

I used pre-cooked beet from the supermarket for this recipe. If you haven’t discovered them in the supermarket yet, then take them with you next time! It’s super practical, saves you a lot of time and you can quickly whip up a healthy salad. For me, pre-cooked beet is already firmly on my shopping list! We also like to snack on beet on its own in between meals or as a side dish.

Note on beet: Of course, you can also use uncooked beet for this salad and cook it yourself beforehand. However, please note that the preparation time will then be extended by approx. 40 minutes.

Beet salad recipe – the ingredients

  • Precooked beet: You can find this in almost every supermarket. My favorite brand is Demeter. You can find it at Alnatura or Tegut, for example.
  • Fresh oranges
  • Couscous or bulgur
  • Cucumber
  • Fresh herbs such as parsley and mint
  • Olive oil & lemon: For the dressing.

Step-by-step instructions for beet salad

  • Step 1: Cook the couscous
    Prepare the couscous (or bulgur) according to the packet instructions and set aside for later.
  • Step 2: Slicing
    Cut the beet, cucumber and oranges into bite-sized pieces. Finely chop the parsley and mint.
  • Step 3:Mix the dressing
    olive oil and the juice of half a lemon well. Add salt to taste if necessary.
  • Step 4: Serve & enjoy.
    Place all the finely chopped ingredients in a large bowl with the couscous (or bulgur). Pour over the dressing, mix well and enjoy!

Over the pre-cooked beet

In the supermarket you can find pre-cooked beet in jars or whole tubers vacuum-packed in plastic bags. For this recipe, I used the vacuum-packed beet. Here, whole tubers that do not meet the “beauty ideals” are sorted out directly during the harvest, cooked and vacuum-packed in plastic bags. The great thing is that there is absolutely no loss of quality during this process.

Beet salad with couscous & oranges

This is a super simple and very tasty salad. It is also very quick to prepare with pre-cooked beet from the supermarket. The combination with orange and couscous goes really well with it! I hope you enjoy my salad.

Ingredients
  

  • 400 g precooked beet
  • 3 Oranges
  • 100 g Couscous or bulgur
  • 1 half Cucumber
  • 1 large bunch(approx. 100g) fresh flat-leaf parsley
  • ca 40 g fresh mint
For the dressing:
  • 5 tbsp Olive oil
  • ½ Lemon Lemon juice
  • a little salt to taste

Equipment

  • 1 large Bowl

Method
 

  1. Prepare the couscous (or bulgur) according to the package instructions and set aside for later.
  2. Cut the beet and cucumber into bite-sized pieces. Peel the oranges and also cut into bite-sized pieces. Finely chop the parsley and mint.
  3. Place all the ingredients in a bowl. Drizzle with olive oil and lemon. Mix everything well and enjoy.

Notes

  1. This salad is also very easy to prepare in advance.
  2. Feel free to add or replace other vegetables and fruit here. Such as kiwi, tomato, bell bell pepper.
  3. I like to prepare a little more couscous, so I have it ready for the next few days.
