Prepare the beet

Beet is incredibly versatile – and you can prepare it in many different ways: cooked, roasted, raw or even as a juice. Depending on how you use them, their taste changes: from earthy and strong to mild and slightly sweet.

  • When cooked, it is perfect for warm dishes such as oven vegetables or soups.
  • Grated raw, it adds crisp freshness to salads.
  • Roasted in the oven, it develops a sweet, nutty aroma – ideal for savory bowls or vegetable dishes.

Cooking beet – how long?

  • You can easily cook beet yourself: Wash the tubers thoroughly (preferably with gloves), cook unpeeled in salted water with a little caraway (optional) for around 30-45 minutes until they are soft. Then rinse briefly – the peel can be easily rubbed off.
  • You can also use pre-cooked beet for quick dishes. It is vacuum-packed, ready to serve and perfect for beet recipes such as salads or bowls – slightly milder, but just as aromatic.

Beetroot Salad Recipe

Beet salad with couscous & oranges

This is a super simple and very tasty salad. It is also very quick to prepare with pre-cooked beet from the supermarket. The combination with orange and couscous goes really well with it! I hope you enjoy my salad.

Ingredients
  

  • 400 g precooked beet
  • 3 Oranges
  • 100 g Couscous or bulgur
  • 1 half Cucumber
  • 1 large bunch(approx. 100g) fresh flat-leaf parsley
  • ca 40 g fresh mint
For the dressing:
  • 5 tbsp Olive oil
  • ½ Lemon Lemon juice
  • a little salt to taste

Equipment

  • 1 large Bowl

Method
 

  1. Prepare the couscous (or bulgur) according to the package instructions and set aside for later.
  2. Cut the beet and cucumber into bite-sized pieces. Peel the oranges and also cut into bite-sized pieces. Finely chop the parsley and mint.
  3. Place all the ingredients in a bowl. Drizzle with olive oil and lemon. Mix everything well and enjoy.

Notes

  1. This salad is also very easy to prepare in advance.
  2. Feel free to add or replace other vegetables and fruit here. Such as kiwi, tomato, bell bell pepper.
  3. I like to prepare a little more couscous, so I have it ready for the next few days.
