  • Firm-boiling potatoes – as large as possible so that they are easy to fill
  • My creamy white bean and coconut curry ideal when it’s already prepared
  • Grated mozzarella or vegan grated cheese – for the golden crust
  • Fresh red chili – brings a pleasant spiciness
  • Olive oil & salt – for the crispy shell

Step-by-step instructions

  • Step 1: Preheat the oven:Preheat the oven to 220 °C top/bottom heat.
  • Step 2: Prepare the potatoes.Wash thoroughly, prick several times with a fork and rub with olive oil.
  • Step 3: Bake:Cook in the oven for about 1 hour – the baking time may vary depending on the size.
  • Step 4: Filling.Cut the potatoes in half lengthways, fluff the inside slightly with a fork and season with salt. Then fill with white bean curry.
  • Step 5: Gratinate.Top with cheese and chili and bake for another 15-20 minutes until the cheese is golden brown.
  • Step 6: Serve. Serve with fresh coriander, yogurt or salad – done!

Which potatoes for baked potatoes?

Firm-boiling or predominantly firm-boiling potatoes are best – they keep their shape and still have a pleasantly soft consistency after baking.

Baked potatoes – how long in the oven?

Depending on their size, they need about 50 to 70 minutes at 220 °C. They are done when you can easily prick them with a knife.

What goes well with baked potatoes?

These stuffed potatoes are a great main course, but also taste good with:

  • a yogurt or herb dip
  • extra lime juice and fresh coriander

Stuffed Baked Potatoes with Bean Curry

Hearty baked potatoes stuffed with a creamy bean curry and topped with melted cheese — an easy, comforting vegetarian oven dish that’s filling and absolutely crowd-pleasing.

Ingredients
  

  • 4 large waxy potatoes
  • white bean coconut curry  made using my recipe
  • 200 g shredded mozzarella or vegan shredded cheese
  • 1 red chili finely chopped
  • 2 tbsp olive oil
  • salt, to taste

Method
 

  1. Preheat the oven to 220 °C (top/bottom heat).
  2. Wash the potatoes, pierce them several times with a fork, and rub them with olive oil.
  3. Bake on a tray for about 60 minutes, until they are soft.
  4. Halve the potatoes, loosen the inside with a fork, and lightly season with salt.
  5. Fill each half with 2–3 tbsp bean curry.
  6. Sprinkle with cheese and chili, and bake for another 15–20 minutes until the cheese is golden brown.
  7. Serve with fresh cilantro or a yogurt dip, if desired.

Notes

  • Das Bohnen-Curry kann gut am Vortag vorbereitet und kalt eingefüllt werden. Für die vegane Variante einfach veganen Käse verwenden.
