Halloumi cheese in a sesame puff pastry coating
Halloumi cheese is one of our favorite cheeses. I got to know it through my Palestinian family-in-law. It is eaten there for dinner or breakfast. I came up with the version with the sesame puff pastry coating when I didn’t want to use my puff pastry for a sweet dish after all and preferred to make something savory out of it. The sesame seeds on top make all the difference to all the other halloumi preparations out there. Simply heavenly!!! So you have the great soft consistency and the great taste of halloumi, the crispy puff pastry and the wonderful aroma of roasted sesame seeds. The best combination ever.
The great thing about this recipe is that it’s really easy and super quick to make. So it’s perfect for a quick after-work dish. I recommend a refreshing salad as a side dish. At the end, I topped the baked halloumi with chili flakes and honey (or date syrup)!
What is halloumi cheese?
Halloumi cheese is originally made from sheep’s, goat’s and cow’s milk. This is heated with cream and mixed with water, rennet and salt. The resulting mass is then heated again, shaped and finally sprinkled with salt. By repeatedly heating and adding whey during production, the halloumi cheese later retains its shape during grilling, baking and other hot affairs.
Where does Halloumi cheese come from?
Halloumi cheese is still very much in vogue here in Germany. But in many Mediterranean countries such as Greece, Egypt, Turkey and Palestine, halloumi cheese has been a very popular specialty for over 2,000 years. Halloumi is perfect for grilling and roasting, but also goes well with warm curry dishes!
What does halloumi cheese taste like?
If you like mozzarella, then you will also like halloumi. Halloumi cheese is slightly firmer than mozzarella but has a similar fibrous consistency. As halloumi squeaks slightly between the teeth when eaten, it is often called squeaky cheese. This often seems a little strange at first, but this is completely normal with halloumi. Halloumi cheese also tastes slightly salty, so when cooking with halloumi I recommend holding back a little on the salt or always seasoning to taste!
Where can I buy halloumi cheese?
You can buy halloumi in Turkish, Arabic or well-stocked German supermarkets. I used this halloumi for this recipe.
