It has anti-inflammatory properties and aids digestion. The small green sprouts are not only versatile, but also a great addition to a balanced diet.

When cooking with broccoli, it is important to choose the right cooking method to preserve the nutrients. Steaming, blanching or briefly sautéing are ideal methods for preparing broccoli, as they preserve the nutritional value better than long boiling. The green florets should still be slightly firm to the bite to retain their texture and flavor.

Roasted broccoli from the oven

This recipe with broccoli is a hit with us: as soon as the broccoli comes out of the oven, my children pounce on it – no matter how much I make, it’s gone immediately. We prefer to eat it on its own with salt, pepper and yogurt dip. With toasted almonds and lemon zest, it becomes even fresher and is perfect as a side dish or for a bowl.

Creamy broccoli curry with cashews and coconut milk

Today I’m sharing something truly special: creamy broccoli curry with cashews and coconut milk. This curry is one of my favorite broccoli recipes. It’s super easy and tastes incredibly delicious! I hope you enjoy this recipe.

Ingredients
  

  • 1 medium-sized onion diced
  • 3 garlic cloves chopped
  • 800 g broccoli florets from 2 heads of broccoli
  • 2 medium-sized tomatoes diced
  • 200 ml coconut milk
  • 1 tsp chili powder (hot)
  • ½ tsp turmeric
  • 1 tsp paprika powder
  • salt & pepper to taste
  • 50 g cashews
Sonstiges:
  • fresh chili pepper optional
  • a little sesame seeds for garnish optional
  • fresh cilantro optional

Method
 

  1. Heat oil in a pan. Sauté the onions and garlic.
  2. Add the broccoli florets and sauté until lightly browned. Then cover with a lid and cook over medium heat until tender but still slightly crisp (about 5–7 minutes).
  3. Remove the broccoli, onions, and garlic from the pan and set aside for later.
  4. In the same pan, add the tomatoes, spices, and cashews and sauté over medium heat (add 1–2 tbsp of oil if needed).
  5. Deglaze with coconut milk and water. Bring everything to a boil, then reduce to medium heat, cover, and let it simmer for about 5 minutes.
  6. Season with salt and pepper. Remove the pan from the heat and let it cool slightly. Blend the sauce with an immersion blender until creamy.
  7. Gently fold in the broccoli florets.
  8. Top with chopped cashews, chili, cilantro, and sesame seeds as desired (optional).

Notes

  • Since the fat separates and rises to the surface during storage, you should shake the coconut milk well before using it.
  • If you like it spicy, feel free to finish it with some fresh chili flakes.
  • If you don’t have fresh tomatoes on hand, you can replace 1 tomato with 1 tbsp of tomato paste.
