15 great veganuary recipes

Veganuary again at last! The pants are too tight, when tying your shoes it always feels like something is in the way and somehow you’ve become a bit sluggish :-). In January, the motivation to get rid of the extra pounds from all the past festive meals and sweets is very high. One possible way to do this is to eat vegan and healthy. At least for the first month of the year. I’ve put together some really quick and easy vegan dishes for you here. I wish you lots of fun ❤️.

What is Veganuary?

Veganuary is a global campaign that encourages people to live purely plant-based for a month in January. The name is made up of “vegan” and “January”. The aim of the movement is to make the vegan lifestyle better known, raise awareness of the environment, health and animal welfare and give people an opportunity to simply try out a vegan diet.

Vegan vegetable dishes

These are the simplest and yet most surprising dishes I have for you. They usually consist of one vegetable, are quick and easy to prepare and taste really delicious despite their simplicity.

There are several ways to prepare cauliflower in the oven. My oriental version is vegan, delicious and super easy. Baked cauliflower in combination with my incomparable tahini sauce. 7. baingan ka bharta recipe (eggplant puree)

This Baingan ka Bharta recipe is vegan and super simple, made with grilled eggplants, tomatoes, onions, garlic and spices. Traditionally, the eggplants for this dish are grilled on charcoal to get a smoky flavor. Baingan ka Bharta is best enjoyed with a warm roti or naan bread.

8. stuffed sweet potatoes with chickpeas, spinach & tahini

Creamy Eggplant Pasta Without Cream!

This eggplant pasta is not only incredibly delicious but also extra creamy — all without any cream or cheese, making it a vegan-friendly dish without compromise!

Ingredients
  

For the Eggplants
  • 3 medium eggplants
  • 2 fulll tsp salt
  • about 70 ml olive oil for brushing or roasting
For the Sauce
  • etwas oil for sautéing
  • 1 big onions diced
  • 4 garlic cloves minced
  • 5 tbsp omato paste  alternaiv: or 2 tomatoes, diced
  • 350 ml coconut milk
  • 500 g penne
  • salt and pepper to taste
  • 2 tsp paprika
  • 1 tsp Italian herbs
  • ½ tsp chili powder optional

Method
 

  1. Slice the eggplants into 2–3 cm thick rounds, place them on a large baking sheet, sprinkle with salt on both sides, and let them sit for 10 minutes to draw out moisture.
  2. Pat the eggplant slices dry, brush them with olive oil and a little paprika, then grill them on both sides on a grill pan or bake them in the oven. You can also pre-sear them in a pan.
  3. Cook the penne according to package instructions. Do not drain the pasta water completely — reserve about 200 for later.
  4. Heat the oil in a deep pan (or pot) and sauté the onion and garlic over medium heat.
  5. Add the tomato paste and sauté for another 2 minutes.
  6. Deglaze with 100–150 of pasta water and the coconut milk.
  7. Season to taste with salt, pepper, and Italian herbs.
  8. Cover and simmer on low heat for about 15 minutes so the flavors can fully develop.
  9. Gently fold the roasted eggplant slices into the sauce along with the pasta, adjust seasoning, and enjoy.

Notes

  1. If the sauce reduces too much while cooking, simply add more pasta water as needed.
  2. Zucchini and bell peppers are great alternatives to eggplant in this recipe.
  3. If you don’t have a grill pan, you can also pan-fry the eggplant slices on both sides before adding them to the sauce.
